Ingredients
Main Ingredients
- 1 15-ounce can chickpeas, drained and rinsed
- 1 15-ounce can pumpkin purée (not pumpkin pie filling!)
- 2 cloves garlic, minced or grated
- ½ lemon, juiced
- ⅓ cup tahini
- 1 tablespoon pure maple syrup
- 1 teaspoon kosher salt
- 1 teaspoon ground cumin
- ¾ teaspoon ground cinnamon
- Pinch cayenne pepper
- ¼ cup olive oil
- ¼ cup ice water
For Serving (Optional)
- Extra olive oil
- Pomegranate arils
- Toasted pepitas
- Finely chopped fresh rosemary
- Sliced apples
- Sliced carrots
- Pita chips
- Root veggie chips
Instructions
- Prepare the base ingredients: Add the drained and rinsed chickpeas, pumpkin purée, and minced garlic to the bowl of a food processor. Pulse a few times to break the ingredients into smaller pieces, making blending easier.
- Add the flavorings: Pour in the freshly squeezed lemon juice, tahini, pure maple syrup, kosher salt, ground cumin, ground cinnamon, and a pinch of cayenne pepper to the food processor bowl with the chickpea mixture.
- Blend the mixture: Turn on the food processor. While it is running, slowly stream in the olive oil to incorporate fat and smooth out the texture. Allow the processor to run for 2 to 3 minutes until the mixture resembles a creamy but slightly chunky hummus.
- Adjust texture: With the processor still running, gradually add the ice water one tablespoon at a time. This thinning step will smooth out the hummus to the desired consistency. Continue adding or reducing water amount depending on how creamy or thick you want your hummus.
- Serve and garnish: Transfer the hummus to a serving bowl. Drizzle with extra olive oil and sprinkle with finely chopped fresh rosemary or pomegranate arils for a festive touch. Serve alongside pita chips, sliced apples, carrots, or root veggie chips for dipping and enjoy your cozy fall snack.
Notes
- Use pumpkin purée, not pumpkin pie filling, for best savory flavor.
- Adjust cayenne pepper amount based on your desired spice level.
- Maple syrup adds a subtle sweetness that complements the pumpkin and spices.
- For a smoother hummus, process for longer and add more ice water as needed.
- This hummus can be refrigerated in an airtight container for up to 4 days.
- Try toasted pepitas or pomegranate arils as an optional garnish to add texture and color.
