Ingredients
Chicken and Seasoning
- 1 pound boneless, skinless chicken breasts
- 2 teaspoons taco seasoning
- 1 tablespoon olive oil
Cheesy Creamy Filling
- 1/2 cup sour cream
- 1 (4.5 oz) can diced green chiles
- 1/4 cup chopped cilantro
- 4 oz cheddar cheese, shredded
- 4 oz Monterey Jack cheese, shredded
Additional
- 4 burrito-sized flour tortillas
Instructions
- Prepare Chicken: Cut the chicken breasts in half horizontally to create thinner cutlets. Evenly sprinkle 2 teaspoons of taco seasoning on both sides of the chicken pieces.
- Cook Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook, turning once, until the internal temperature reaches 165ºF and the chicken is cooked through, about 6-8 minutes per side.
- Chop Chicken: Transfer cooked chicken to a cutting board and allow to cool slightly for safe handling. Then chop the chicken into medium-fine dice.
- Mix Filling: In a large bowl, combine 1/2 cup sour cream, the can of diced green chiles, 1/4 cup chopped cilantro, shredded cheddar cheese, shredded Monterey Jack cheese, and the chopped chicken. Stir well to thoroughly combine all ingredients into a creamy filling.
- Assemble Quesadillas: Heat a nonstick skillet over medium heat. Place one flour tortilla in the skillet, then spread about 1/4 of the chicken mixture evenly over one half of the tortilla. Fold the other half of the tortilla over the filling to form a half-circle. Repeat with another tortilla on the other side of the skillet.
- Cook Quesadillas: Cook the quesadillas until the underside is golden brown and toasted, about 3-4 minutes. Carefully flip them over and cook the second side until browned and the cheese inside has melted, about 3-4 more minutes. Avoid cooking too quickly to ensure the cheese melts properly.
- Repeat & Serve: Remove cooked quesadillas from the skillet. Repeat the assembly and cooking process with the remaining tortillas and chicken filling. Once all are cooked, cut each quesadilla into triangles and serve warm.
Notes
- You can use whole wheat or gluten-free tortillas as a substitute if preferred.
- For extra crispiness, lightly brush the tortillas with butter or oil before cooking.
- Adjust the taco seasoning amount based on the desired spice level.
- Serve with salsa, guacamole, or sour cream on the side for additional flavor.
- This recipe is best enjoyed fresh but can be reheated in a skillet or oven to retain crispness.
