Ingredients
Chicken and Seasonings
- 600 g skinless boneless chicken breasts (~1 ¼ lb)
- 1 teaspoon cooking sea salt / kosher salt
- 1 teaspoon dried thyme
- ½ teaspoon freshly cracked black pepper
Cooking and Sauce Ingredients
- 1 tablespoon cooking oil
- 5-6 cloves fresh garlic, minced
- 1 cup chicken stock (chicken broth) (250 ml)
- 2 teaspoons white wine vinegar
- ½ cup thickened cream (heavy cream) (125 ml)
- Pinch dried chilli flakes (red pepper flakes), optional
- ⅓ cup parmesan cheese, finely grated (35 g / 1 ¼ oz)
- 200 g baby leaf spinach (7 oz)
Instructions
- Season the Chicken: Slice the chicken into large chunks, about 2-bite sized or 2×2 inch pieces. Place them in a large bowl and add salt, dried thyme, and freshly cracked black pepper. Mix well to evenly coat the chicken.
- Cook the Chicken: Heat the cooking oil in a large deep skillet or frying pan over medium-high heat. Add the seasoned chicken pieces and cook for 3-4 minutes on each side until just cooked through and golden. Remove the chicken from the pan and set aside on a plate. Cover with foil to keep warm.
- Sauté Garlic: Add the minced garlic to the same pan and cook for 1 minute, stirring frequently to prevent burning and release its aroma.
- Deglaze the Pan: Pour in the chicken stock and white wine vinegar. Use a spatula to scrape the bottom of the pan, loosening any cooked bits stuck to the surface. Let the mixture come to a simmer and reduce for about 1 minute until reduced by half.
- Add Cream and Seasonings: Stir in the thickened cream and optional dried chilli flakes. Bring the sauce back to a gentle simmer and allow it to reduce and thicken slightly, creating a rich texture.
- Melt Parmesan Cheese: Add the grated parmesan cheese to the pan and stir continuously until it melts completely and the sauce is creamy and smooth.
- Combine Chicken and Spinach: Return the cooked chicken pieces to the pan. Add the baby leaf spinach and cook, stirring and turning the mixture over, until the spinach is wilted and everything is heated through.
- Serve: This creamy garlic chicken is delicious served over mashed potatoes. It also pairs well with rice or pasta for a hearty meal.
