This classic hummus recipe delivers a creamy, flavorful Middle Eastern dip made from cooked chickpeas, tahini, garlic, cumin, lemon juice, and olive oil. Smooth and rich, it’s perfect for serving with pita bread, veggies, or as a spread.

  • Total Time: 40 minutes
  • Yield: 4 servings

Ingredients

Chickpeas

  • 1 15-ounce can chickpeas, peeled, rinsed, and drained
  • ½ tsp baking soda

Hummus Mixture

  • ½ cup good-quality tahini
  • 2–4 tablespoons cold water (or more as needed)
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon ground cumin
  • ¾ teaspoon fine sea salt
  • 2 medium cloves garlic (peeled and smashed)
  • Juice of 1 lemon (2–3 tablespoons)

Optional Toppings

  • Extra drizzle of olive oil
  • Chopped fresh parsley
  • Sprinkle of paprika
  • Toasted pine nuts

Instructions

  1. Cook the Chickpeas: Place the chickpeas and baking soda in a pot with enough water to cover them. Bring to a boil and let them cook for 20 minutes until soft. Drain and rinse the chickpeas thoroughly.
  2. Prepare the Base: In a food processor, combine the tahini, cold water, olive oil, ground cumin, salt, smashed garlic cloves, and lemon juice. Process until the mixture is smooth, forming the creamy tahini base.
  3. Puree Chickpeas: Add the cooked chickpeas to the food processor. Puree for 3 to 4 minutes, stopping halfway to scrape down the sides of the bowl to ensure an even texture. If the hummus is too thick, add more cold water by tablespoons until the desired creaminess is achieved.
  4. Adjust Seasoning: Taste the hummus and add more salt, cumin, or lemon juice as desired to suit your preferences. Blend briefly to incorporate any additional seasoning.
  5. Serve and Store: Serve the hummus immediately, garnished with optional toppings like a drizzle of olive oil, chopped parsley, paprika, or toasted pine nuts. Alternatively, transfer the hummus to a sealed container and refrigerate for up to 3 days.

Notes

  • Peeling canned chickpeas or cooking your own can create extra smooth hummus.
  • Adjust cold water quantity to control hummus texture from thick to creamy.
  • Using fresh lemon juice enhances flavor over bottled lemon juice.
  • Hummus keeps well refrigerated for up to 3 days.
  • Feel free to add spices like smoked paprika or cayenne for a kick.
