Ingredients
Meat and Dairy
- 1 lb Italian sausage
- 8 ounces cream cheese, softened
- 1/2 cup grated Parmesan cheese
Vegetables and Herbs
- 1/2 cup diced onion
- 2 cloves minced garlic
- 1/4 cup fresh basil
Pantry / Dry Goods
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 4 cups chicken broth
- 1 (14.5 ounces) petite diced tomatoes
- 8 ounces ditalini pasta
Instructions
- Brown the Sausage: Place the Italian sausage in a large Dutch oven or pot. Cook over medium heat, breaking it apart and crumbling as it cooks, until fully browned and cooked through. Drain off any excess fat.
- Sauté Onions and Seasonings: Add the diced onion, Italian seasoning, salt, and pepper to the pot. Cook together for 1 to 2 minutes until the onions become softened and fragrant.
- Add Garlic: Stir in the minced garlic and cook for an additional 1 minute, stirring constantly to avoid burning.
- Add Liquids and Pasta: Pour in the petite diced tomatoes (with juices), chicken broth, and add the ditalini pasta. Ensure the pasta is fully covered by the broth. Bring the mixture to a rolling boil.
- Cook Pasta: Boil the soup for about 8 minutes or until the pasta reaches al dente texture, stirring occasionally to prevent sticking.
- Add Cream Cheese and Parmesan: Reduce heat to medium and stir in the softened cream cheese and grated Parmesan cheese. Continue cooking and stirring for about 5 minutes until the cream cheese has melted and the soup turns creamy and smooth.
- Finish and Serve: Remove from heat. Ladle the soup into bowls and garnish with fresh basil leaves before serving to add a bright herbal note.
Notes
- For a spicier kick, use spicy Italian sausage.
- You can substitute the ditalini pasta with small shells or elbow macaroni.
- If you prefer a thicker soup, let it simmer a few minutes longer until the desired consistency is reached.
- Leftovers keep well refrigerated for up to 3 days and reheat nicely on the stovetop.
- Freshly grated Parmesan cheese provides the best flavor but pre-grated cheese can be used in a pinch.
