Ingredients
Sauce Ingredients
- 4 tablespoons peanut butter
- 1 tablespoon vegan fish sauce or vegan oyster sauce (or soy sauce)
- 2 tablespoons red curry paste
- 1 tablespoon agave nectar or maple syrup
- 13.5 oz can coconut milk
Vegetables and Aromatics
- 3 green onions, finely sliced
- 2 cloves fresh garlic, minced
- 1 inch fresh ginger, minced
- 2 carrots, julienned
- 1 red bell pepper, sliced
Main Ingredients
- 400 g cooked udon noodles (or ramen, soba, or rice noodles)
- 2 tablespoons unsalted roasted peanuts, chopped, plus extra for garnish
- Fresh cilantro, optional for garnish
- 2 tablespoons cooking oil (for sautéing)
Instructions
- Make the sauce: In a bowl, whisk together the peanut butter, vegan fish sauce (or soy sauce), red curry paste, agave nectar, and coconut milk until you achieve a smooth and creamy sauce.
- Sauté the aromatics: Heat 2 tablespoons of cooking oil in a large skillet or saucepan over medium heat. Add the finely sliced green onions, minced garlic, and minced ginger. Sauté gently for about 2 minutes until fragrant and aromatic.
- Cook the vegetables: Add the julienned carrots and sliced red bell pepper to the skillet. Cook for an additional 2 to 3 minutes, stirring frequently, until the vegetables soften but still retain some crunch.
- Combine ingredients: Add the cooked udon noodles, prepared peanut curry sauce, and chopped peanuts to the skillet. Toss thoroughly to coat the noodles evenly with the sauce and mix everything well. Cook for 2 to 3 minutes until the noodles are heated through.
- Serve: Divide the noodles into bowls. Garnish with extra chopped peanuts, fresh cilantro leaves, and more sliced green onions for added freshness and crunch. Serve immediately and enjoy!
Notes
- You can substitute udon noodles with ramen, soba, or rice noodles depending on preference.
- Adjust the amount of red curry paste based on your desired spice level.
- For added protein, consider topping with tofu, tempeh, or grilled chicken if not vegan.
- Use unsweetened coconut milk for a less sweet and richer flavor.
- To make the recipe nut-free, replace peanut butter with sunflower seed butter and omit peanuts.
