Ingredients
Chicken and Sauce
- 1 to 1.5 pounds boneless skinless chicken breasts
- 8 ounces cream cheese, softened and cubed
- 21 ounces cream of soup (two 10.5 ounce cans of Cream of Onion or Cream of Chicken)
- 2 tablespoons ranch seasoning mix (or 1 packet)
Noodles and Toppings
- 6 ounces noodles, cooked
- Shredded Italian cheese blend, for topping (optional)
- Freshly ground black pepper, for topping (optional)
Instructions
- Prepare the Chicken: Trim any excess fat or tendons from the chicken breasts and place them evenly at the bottom of a 6-quart slow cooker.
- Add Soup and Seasoning: Pour the two cans of cream of soup evenly over the chicken breasts. Sprinkle the ranch seasoning mix over the top. Then, place the softened, cubed cream cheese directly onto the chicken mixture to help create a creamy sauce as it cooks.
- Cook Slowly: Cover the slow cooker and cook on low heat for approximately 5 hours. Stir occasionally during cooking and break up the chicken breasts as they soften to incorporate the ingredients and create a smooth texture.
- Prepare Noodles: While the chicken mixture cooks, prepare your choice of noodles according to package directions. Drain well.
- Combine and Serve: Either stir the cooked noodles into the creamy chicken mixture or serve the chicken mixture ladled over the noodles. Optionally, top with shredded Italian cheese blend and a sprinkle of freshly ground black pepper to enhance flavor before serving.
Notes
- For creamier texture, use cream cheese at room temperature before adding to the slow cooker.
- You can substitute cream of onion soup with cream of chicken soup depending on flavor preference.
- Ranch seasoning mix can be homemade or store-bought; adjust quantity slightly to taste.
- Any noodles can be used—egg noodles are traditional, but pasta like fettuccine or rotini work well too.
- To make the dish lower fat, opt for a low-fat cream cheese and reduced-fat cheese blend for topping.
- Leftovers can be refrigerated for 3-4 days and reheated gently on the stovetop or microwave.
