Ingredients
Roasted Butternut Squash
- 2 cups butternut squash, peeled, seeded, and cubed
- 1 tablespoon olive oil
- Salt and pepper, to taste
Sausage
- 1 tablespoon olive oil
- ½ lb (8 oz) sausage, crumbled, without casings
Creamy Pasta Sauce
- 1 tablespoon olive oil
- 4 garlic cloves, minced
- 6 oz spinach
- 1 cup heavy cream
- ⅓ cup Parmesan cheese, shredded
- ¼ teaspoon salt (optional, adjust according to sausage saltiness)
Pasta
- 8 oz farfalle (bow tie pasta)
Instructions
- Roast Butternut Squash: Preheat your oven to 400°F (200°C). In a large bowl, toss the peeled, seeded, and cubed butternut squash with olive oil, salt, and pepper until well coated. Spread the squash evenly on a parchment paper-lined baking sheet in a single layer, making sure not to overcrowd it. Roast in the preheated oven for 30 minutes or until tender and slightly caramelized. Remove from oven and set aside.
- Cook Sausage: While the squash is roasting, heat 1 tablespoon of olive oil in a medium skillet over medium heat. Add the crumbled sausage and cook for about 10 minutes, stirring regularly, until the sausage is cooked through and browned. Remove from heat and set aside.
- Make Creamy Sauce: In a separate large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and spinach, cooking and stirring occasionally for 5 to 7 minutes until the spinach wilts. Pour in the heavy cream and bring the mixture to a brief boil. Immediately reduce to a simmer (gentle boil). Add the shredded Parmesan cheese and stir constantly until the cheese melts completely into the sauce. Season with salt cautiously, about ¼ teaspoon, depending on how salty your sausage is. Remove from heat once the sauce is creamy and smooth.
- Cook Pasta and Assemble: Cook the farfalle pasta in boiling salted water according to package instructions, typically between 7 and 11 minutes, until al dente. Drain the pasta well. Add the cooked pasta and cooked sausage into the skillet with the creamy spinach sauce and stir to combine all ingredients. Taste and adjust salt and pepper seasoning if desired. Finally, top the pasta with the roasted butternut squash. You can either stir the squash into the pasta or leave it on top as a garnish before serving.
Notes
- Make sure to spread the butternut squash evenly on the baking sheet to ensure even roasting.
- Adjust the salt in the creamy sauce according to the saltiness of the sausage to avoid over-seasoning.
- You can substitute the sausage with a vegetarian or turkey alternative for a different variation.
- Cooking times may vary slightly based on oven temperature and pasta brand; always check for doneness.
- This dish pairs well with a light green salad or crusty bread for a full meal.
