This comforting Salmon Soup recipe is a hearty and flavorful dish perfect for a wholesome meal. Featuring tender salmon fillets, fresh vegetables, and a creamy broth enhanced with herbs and spices, it’s easy to prepare in under an hour and serves six. The soup blends the richness of half and half with the freshness of dill and optional lemon juice for a bright finish.

  • Total Time: 45 minutes
  • Yield: 6 servings

Ingredients

Sauté Base

  • 1 ½ Tbsp. (10g) olive oil
  • 2 medium onions (130g), chopped
  • 2 medium carrots (140g), sliced

Soup Ingredients

  • 3-4 medium potatoes (~400g), peeled and cubed
  • 5-6 cups (1380 ml) vegetable broth or water (water used in this recipe)
  • 2 bay leaves
  • 5-6 whole peppercorns
  • 1 lb (460g) salmon fillets, cut into 1-inch pieces (skin on or off)
  • 1 cup (145g) frozen green peas
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 cup (240g) half and half (or 1/4 cup cream + 3/4 cup milk)
  • Salt and pepper, to taste
  • Fresh dill, chopped (for garnish)
  • Lemon juice, to taste (optional)

Instructions

  1. Heat the oil and sauté onions: Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook, stirring occasionally, until the onions become fragrant and translucent.
  2. Add carrots and cook: Add the sliced carrots to the pot, stir well, and cook for about 2 more minutes to soften slightly while retaining some texture.
  3. Add potatoes and broth, then simmer: Add the peeled and cubed potatoes, vegetable broth or water, bay leaves, and whole peppercorns. Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a lid and let it simmer for 7 to 10 minutes until the potatoes are tender.
  4. Add salmon and cook: Add the cut salmon pieces gently into the pot and continue cooking on low heat for 5 minutes, allowing the fish to cook through without breaking apart.
  5. Add cream and peas, season the soup: Pour in the half and half, add the frozen green peas, then sprinkle in the garlic powder, paprika, salt, and pepper. Stir gently and cook for another 2 to 3 minutes to warm the peas and combine flavors.
  6. Garnish and serve: Remove the bay leaves and peppercorns if desired. Stir in chopped fresh dill for brightness. Add lemon juice to taste if using. Ladle the soup into bowls and enjoy warm.

Notes

  • Using water or vegetable broth will change the depth of flavor; broth adds more richness.
  • Salmon skin can be left on or removed based on preference.
  • The half and half can be substituted with cream or milk, but half and half balances creaminess and lightness.
  • Fresh dill can be replaced with parsley if unavailable.
  • Adjust seasoning at the end based on taste to avoid over-salting.
