This Creamy Smoky White Beans in Garlicky Tomato Sauce is a comforting and flavorful one-pot recipe featuring tender cannellini beans simmered in a rich tomato sauce infused with garlic, smoky liquid smoke, and fresh spinach. Ready in just 30 minutes, this dish offers a perfect blend of savory and smoky notes, making it an ideal hearty meal or side dish.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Main Ingredients

  • 1 tablespoon extra virgin olive oil (15ml)
  • ½ large red onion (finely diced, 75g)
  • 4 cloves garlic (minced, 12g)
  • ¾ teaspoon sea salt (3.75g)
  • ¼ teaspoon ground black pepper (0.5g)
  • 1½ cups canned cannellini beans (250g)
  • 24 ounce jar tomato sauce (680g)
  • 1 teaspoon liquid smoke (5ml)
  • ½ cup spinach (15g)
  • Squeeze of lime (optional, 5ml)

Instructions

  1. Sauté Aromatics: In a pan over medium-high heat, heat the olive oil. Add the finely diced red onions and minced garlic, sauté for about 5 minutes until the onions become translucent and fragrant.
  2. Add Seasonings and Simmer: Stir in the sea salt, ground black pepper, and Italian seasoning. Reduce the heat to medium and cook the mixture for about 3 minutes to allow the flavors to meld and the sauce to thicken slightly.
  3. Incorporate Beans and Tomato Sauce: Add the cannellini beans, tomato sauce, and liquid smoke to the pan. Stir thoroughly to combine. Increase heat to high for 2 minutes to bring the mixture to a boil, then reduce to a simmer for 8 minutes. Stir once during simmering and cook until the sauce thickens to your liking.
  4. Wilt Spinach: Turn off the heat and stir in the fresh spinach. Let the heat from the sauce wilt the spinach for about 2 minutes.
  5. Final Seasoning and Serve: Taste and adjust salt as needed. Optionally, add a squeeze of lime juice to enhance the flavors. Serve warm with your favorite starches or extra greens, and enjoy!

Notes

  • You can substitute spinach with kale or Swiss chard for different leafy greens variations.
  • Adjust the liquid smoke quantity to your preferred level of smokiness.
  • Serve this dish with crusty bread, rice, or pasta for a complete meal.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop.
