Ingredients
Pasta
- 12 ounces gluten-free pasta, cooked according to package instructions
Sauce
- 2 tablespoons dairy-free butter
- 2 tablespoons gluten-free all-purpose flour
- 1 ½ cups unsweetened dairy-free milk (more to thin if needed)
- 1/3 cup sun-dried tomatoes, chopped into small pieces
- 1 ½ cups fresh packed spinach
- 1 tablespoon garlic powder or minced garlic
- 2 tablespoons nutritional yeast
- 1 tablespoon tomato paste
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon crushed red pepper flakes (optional)
Instructions
- Cook Pasta: Bring a pot of salted water to boil and cook the gluten-free pasta according to the package instructions. Once cooked, drain and set aside.
- Make the Roux: Heat a medium pot or Dutch oven over low heat. Add the dairy-free butter and melt completely. Sprinkle in the gluten-free flour and whisk continuously until it forms a clumpy paste.
- Add Milk and Whisk Smooth: Gradually pour in the unsweetened dairy-free milk while whisking to smooth out any lumps. Maintain low heat and keep whisking to prevent clumps.
- Simmer Sauce: Increase heat to medium-low and continue whisking for 3-4 minutes. Be careful to avoid boiling as the sauce can burn easily.
- Season Sauce: Stir in the salt, black pepper, tomato paste, nutritional yeast, and garlic powder, whisking thoroughly to combine.
- Combine Pasta and Veggies: Add the cooked pasta, chopped sun-dried tomatoes, and fresh spinach into the sauce. Toss everything together; the heat from the pasta and sauce will gently wilt the spinach.
- Serve: Sprinkle with crushed red pepper flakes if desired, and enjoy your creamy sun-dried tomato pasta while warm.
Notes
- If you don’t prefer spinach, you can omit it from the recipe.
- Sun-dried tomatoes can be used either from a package or jar; if from a jar, rinse, drain, and chop before adding.
- Any pasta type like penne, rigatoni, gnocchi, or farfalle works well with this sauce.
- Adjust the amount of dairy-free milk to achieve your preferred sauce consistency.
