Ingredients
Wet Ingredients
- 2 cups whole milk (at room temperature)
- 3 large eggs (at room temperature)
- 2 tablespoons butter (melted)
- 1 teaspoon vanilla extract
Dry Ingredients
- 1½ cups all-purpose flour
- 2 tablespoons sugar
- ¼ teaspoon salt
Instructions
- Mix Wet Ingredients: Combine the milk, eggs, melted butter, and vanilla extract in a large bowl. Whisk thoroughly until fully blended and smooth.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, sugar, and salt until well mixed.
- Make the Batter: Gradually pour the wet mixture into the dry ingredients while whisking continuously to prevent lumps and achieve a smooth batter. Allow the batter to rest and chill for 10 to 30 minutes so the flour hydrates completely, improving texture.
- Preheat the Pan: Heat a non-stick skillet or dedicated crêpe pan over medium heat. Lightly grease the surface using butter spray and then wipe off any excess with a paper towel to ensure a thin, even coating.
- Cook the Crêpes: Pour approximately ⅓ cup of batter into the center of the pan. Quickly swirl the pan to spread the batter evenly and thinly across the surface.
- First Side Cooking: Allow the crêpe to cook for 3 to 4 minutes until the edges gently lift and the surface looks set and lightly golden brown.
- Flip and Cook Other Side: Using one or two spatulas, carefully flip the crêpe and cook for an additional 1 minute on the other side. Adjust the heat as needed to avoid burning.
- Repeat: Transfer the cooked crêpe to a plate and repeat the cooking process with the remaining batter, greasing the pan lightly before each crêpe.
- Serve: Serve warm with your favorite sweet or savory toppings such as fruit, syrup, chocolate spread, or cheese.
Notes
- Resting the batter is key to tender crêpes, so do not skip the chilling step.
- Use a non-stick pan to prevent sticking and make flipping easier.
- Adjust the amount of batter based on the size of your pan to achieve thin crêpes.
- The batter can be made a day ahead and stored in the refrigerator for convenience.
- Crêpes can be kept warm in a low oven while cooking the remaining batter.
