Ingredients
Vegetables & Cheese
- 1 (10 oz) bag frozen broccoli or cauliflower rice (about 3.5 cups)
- 2 cups freshly shredded cheddar cheese
Binding & Seasoning
- 1 large egg
- 2 tbsp white flour or almond flour
- Seasoning to taste: salt, pepper, garlic powder
Instructions
- Preheat and Prepare Baking Sheet: Preheat your oven to 400°F (204°C). Line a large baking sheet with parchment paper to prevent sticking and ensure even baking.
- Cook and Drain Broccoli Rice: Microwave the frozen broccoli or cauliflower rice according to the package instructions. Once heated, transfer it to a fine strainer placed over the sink. Allow it to cool slightly, then firmly squeeze and drain out as much excess liquid as possible to avoid soggy bites.
- Combine Ingredients: In a medium-sized mixing bowl, stir together the well-drained broccoli rice, the large egg, shredded cheddar cheese, flour, and seasoning (salt, pepper, and garlic powder) until everything is evenly incorporated.
- Form the Bites: Using your hands, shape the mixture into approximately 16 small balls. Place them on the prepared baking sheet and gently press each ball down slightly to form small patties for even baking and crispiness.
- Bake and Flip: Bake the patties in the preheated oven for 15 minutes. Then, carefully use a spatula to flip each patty over. Continue baking for an additional 8 to 10 minutes, or until the bites are crispy and golden brown on both sides.
- Serve: Remove from the oven and allow to cool slightly. Serve these crispy broccoli cheese bites on their own or with ranch dressing as a tasty dipping sauce. Enjoy!
Notes
- For best texture and flavor, freshly shredded cheddar works better than pre-shredded cheese which often contains anti-caking agents.
- You can substitute the white flour with almond flour to make the recipe gluten-free.
- To reduce sodium, adjust salt according to your preference or use low-sodium seasoning blends.
- These bites can be prepared in advance and refrigerated before baking or frozen for longer storage.
- If you want a crispier texture, baking a few minutes longer after flipping may be done carefully to avoid burning.
