Ingredients
Cheese Filling
- 2 cups shredded akawi cheese
- 1 ½ cups shredded mozzarella cheese
- ¼ cup chopped parsley
- ½ teaspoon black pepper
Pastry and Binding
- 25 spring roll pastry wrappers (square 8-inch)
- 1 cup warm water
- 1 tablespoon all purpose flour
For Baking
- Olive oil or cooking spray, for brushing
Instructions
- Prepare the Cheese Mixture: In a large bowl, combine the shredded akawi cheese, shredded mozzarella cheese, chopped parsley, and black pepper, mixing thoroughly to distribute the flavors evenly.
- Make the Flour Paste: In a small bowl, mix warm water with all-purpose flour until a smooth paste forms; this will be used to seal the spring rolls.
- Arrange Wrappers: Lay the spring roll pastry wrappers on a dry cutting board, positioning each square so that one corner points towards you, creating a diamond shape for easier rolling.
- Fill and Fold: Place about 2 tablespoons of the cheese mixture in the lower third of each wrapper. Fold the bottom corner over the filling, then fold in the sides toward the center to encase the cheese.
- Seal the Rolls: Dab the exposed corner of the wrapper with the flour paste using your fingers or a pastry brush, then continue rolling upwards, folding edges inward, pressing lightly to seal all sides securely.
- Freeze Before Baking: Place the sealed rolls seam-side down on a baking sheet lined with parchment paper and freeze for 30 minutes to help maintain their shape during baking.
- Preheat Oven: Set the oven to 425°F (220°C). Prepare a baking sheet with parchment paper and lightly brush or spray the rolls with olive oil or cooking spray to promote crispiness.
- Bake the Rolls: Bake the rolls in the preheated oven for 15-20 minutes or until they turn golden brown and crisp on the outside, then remove and serve warm.
Notes
- Freezing the rolls before baking helps them retain their shape and prevents the wrappers from cracking during baking.
- Use a good quality akawi cheese for authentic flavor; if unavailable, substitute with a mild white brine cheese.
- Olive oil brushing can be substituted with cooking spray for a lighter option.
- These rolls are best served immediately after baking for optimal crispiness.
- The water-flour paste acts as an edible glue to ensure the rolls remain sealed during baking.
