Crispy Cheesy Baked Chicken Tacos combine seasoned ground chicken with melted cheese, baked to perfection in crispy corn tortillas. This easy-to-make, flavorful dish is perfect for a quick weeknight dinner or casual gathering, topped with fresh lettuce, tomato, avocado, cilantro, and a squeeze of lime for a zesty finish.

  • Total Time: 30 minutes
  • Yield: 10 servings

Ingredients

Filling

  • 1 pound ground chicken
  • 3 tablespoons taco seasoning
  • 1/2 tablespoon olive oil
  • Water (as needed, per taco seasoning package instructions)

Tacos

  • 10 corn tortillas
  • 1 tablespoon olive oil (for brushing tortillas)
  • 2 cups shredded cheese
  • 1 cup salsa (or enchilada sauce or taco sauce)

Toppings

  • Lettuce, shredded
  • Tomato, diced
  • Fresh limes, cut into wedges
  • Avocado, sliced
  • Cilantro, chopped

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 425°F (220°C) and line a jumbo baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Cook the Ground Chicken: Heat 1/2 tablespoon olive oil in a skillet over medium-high heat. Add the ground chicken, breaking it up as it cooks until no longer pink. Stir in the taco seasoning and water according to the package instructions and cook until the mixture is well combined and heated through.
  3. Soften the Tortillas: Wrap the stack of corn tortillas in a damp paper towel and microwave for 30 seconds to 1 minute, simply until they are pliable and soft, preventing cracking when folding.
  4. Assemble the Tacos: Evenly arrange the softened tortillas on the prepared baking sheet. Lightly brush both sides of each tortilla with the remaining 1 tablespoon of olive oil. On one side of each tortilla, evenly divide the cooked ground chicken, sprinkle with shredded cheese, and spoon 1 to 2 tablespoons of salsa or chosen sauce on top. Fold the tortilla over to enclose the filling.
  5. Bake the Tacos: Place the baking sheet in the oven and bake for about 15 minutes, or until the cheese is melted and the tortillas are crispy and golden brown.
  6. Add Fresh Toppings: Carefully open each baked taco and garnish with shredded lettuce, diced tomatoes, fresh lime juice, sliced avocado, and chopped cilantro for a fresh and vibrant finish.

Notes

  • Use corn tortillas for authentic flavor and better crisping, but flour tortillas can substitute if preferred.
  • Feel free to swap shredded cheese types according to your taste, such as cheddar, Monterey Jack, or a Mexican blend.
  • Adjust the spice level by choosing mild, medium, or hot taco seasoning.
  • For extra crispiness, place the tacos on a wire rack over the baking sheet while baking.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven for best texture.
