This Crispy Parmesan Baked Cod recipe delivers tender, flaky cod fillets topped with a flavorful, buttery parmesan crumb crust. Perfectly baked to a golden finish, it’s a simple yet elegant seafood dish that comes together in just 30 minutes, making it ideal for a quick weeknight dinner or impressive weekend meal.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

Fish

  • 4 cod fillets (approx. 2 pounds)

Crust

  • 35 butter crackers (such as Ritz or Club, crushed, approx. 1 1/2 cups)
  • ¼ cup Parmesan cheese, grated
  • 2 tablespoons butter, melted
  • 1 teaspoon lemon juice
  • Salt & pepper to taste

Garnish

  • Fresh parsley (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the cod.
  2. Prepare Baking Sheet: Grease a baking sheet or line it with parchment paper to prevent the fish from sticking during baking.
  3. Crush Crackers: Place the butter crackers in a ziplock bag and thoroughly crush them into fine crumbs using a rolling pin or similar tool.
  4. Make Crust Mixture: In a small bowl, combine the crushed cracker crumbs with grated Parmesan cheese, melted butter, lemon juice, and season with salt and pepper. Mix well to create an even coating mixture.
  5. Coat the Cod: Evenly spoon and spread the cracker and Parmesan mixture over the top of each cod fillet, pressing lightly to adhere.
  6. Bake: Place the coated cod fillets onto the prepared baking sheet and bake in the preheated oven for approximately 25 minutes, or until the fish is cooked through and the crust is golden and crispy.
  7. Garnish and Serve: Remove the cod from the oven and garnish with fresh parsley if desired before serving.

Notes

  • Ensure the cod fillets are of even thickness for uniform cooking.
  • You can substitute cracker crumbs with panko breadcrumbs for a different texture.
  • Adjust lemon juice and seasoning according to taste preferences.
  • Serve with lemon wedges for added brightness.
  • Leftovers can be refrigerated for up to 2 days and reheated gently to preserve crispiness.
