These crispy parmesan roasted potatoes are perfectly seasoned with garlic, lemon, and fresh herbs, then baked to golden perfection. Served with an optional roasted garlic whipped feta dip, they make an irresistible side dish for any meal.

  • Total Time: 50 minutes
  • Yield: 4 servings

Ingredients

For the Potatoes:

  • 1 ½ pounds baby gold potatoes, halved lengthwise
  • 1 tablespoon salted butter, melted
  • 1 teaspoon garlic powder
  • ½ teaspoon dried oregano
  • 1 teaspoon kosher salt
  • Lots of freshly ground black pepper

For the Pan:

  • 2 tablespoons salted butter, melted
  • ½ cup (2 ounces) pre-grated store-bought Parmesan cheese (from the refrigerated section)

For Serving:

  • Roasted garlic whipped feta dip, optional but recommended
  • 1 lemon, zested
  • 1 to 2 tablespoons finely chopped fresh parsley
  • 1 to 2 tablespoons finely chopped fresh dill
  • Flakey sea salt, for sprinkling (e.g., Maldon)

Instructions

  1. Preheat the oven: Set your oven to 400 degrees Fahrenheit to ensure it’s ready for roasting the potatoes.
  2. Prepare the potatoes: In a large bowl, combine the halved baby gold potatoes with 1 tablespoon of melted salted butter, garlic powder, dried oregano, kosher salt, and freshly ground black pepper. Gently toss using tongs or your hands until the potatoes are evenly coated with the butter and spices.
  3. Prepare the baking dish: Use a 9×13 inch glass baking dish for best results. Brush 2 tablespoons of melted butter evenly over the bottom of the dish. Then, sprinkle the store-bought pre-grated Parmesan cheese evenly over the buttered surface, without spreading it.
  4. Arrange the potatoes: Place the potatoes cut-side down in a single layer firmly onto the parmesan cheese in the baking dish. This helps create a crispy bottom crust.
  5. Roast the potatoes: Bake in the preheated oven for 35 to 40 minutes until the potatoes are tender when pierced with a fork and the parmesan cheese is golden brown and crispy.
  6. Serve: If using the roasted garlic whipped feta dip, spread about 1 cup of it on the bottom of a serving platter. Using a flexible turner, scoop the potatoes and flip them upside down onto the dip. Immediately garnish with lemon zest, fresh parsley, fresh dill, and a sprinkle of flaky sea salt. Serve any remaining dip on the side. Alternatively, serve the potatoes immediately with your choice of dipping sauce.

Notes

  • Using store-bought pre-grated Parmesan cheese from the refrigerated section is crucial for the best browning and crispiness.
  • A glass baking dish is preferred so you can easily see when the parmesan cheese turns golden and crispy.
  • For an extra punch of flavor, serve with the recommended roasted garlic whipped feta dip or any favorite dipping sauce.
  • Flaky sea salt like Maldon adds a pleasant texture and enhances flavor when sprinkled before serving.
  • Fresh herbs like parsley and dill complement the lemon zest for a fresh bright finish.
