Ingredients
Basic Chickpeas
- 3 (15 oz) cans organic low sodium garbanzo beans (1 can per flavor)
- 1-2 tbsp olive oil
Sweet Flavor
- 1 tbsp maple syrup
- ½ tsp cinnamon
Ranch Flavor
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp dried dill
- ½ tsp dried parsley
- ½ tsp salt
Spicy Flavor
- ½ tsp chili powder
- ½ tsp ground cumin
- ½ tsp paprika
- ½ tsp cayenne pepper
- ¼ tsp garlic powder
- ¼ tsp salt
Instructions
- Preheat the Oven: Set your oven to 400 degrees F (204 degrees C) to ensure it’s hot and ready for roasting the chickpeas.
- Prepare the Chickpeas: Drain and rinse the chickpeas thoroughly using a strainer. Spread them out on a kitchen towel and pat dry, removing and discarding any loose skins. Let them air dry until completely dry to ensure crispiness.
- Arrange on Baking Sheet: Line a rimmed baking sheet with a silicone baking mat or parchment paper. If using parchment paper, lightly spray it with cooking oil such as avocado oil. Spread the chickpeas evenly across the sheet to allow even roasting.
- Initial Roasting: Place the baking sheet in the oven and roast the chickpeas for 20-30 minutes, stirring every 10 minutes. Roast until the chickpeas are a golden brown and crispy.
- Prepare the Spice Mixes: While roasting, combine the ingredients for each flavor—sweet, ranch, and spicy—in separate small bowls and set aside.
- Divide and Coat Chickpeas: Once roasted, separate the hot chickpeas evenly into three bowls. For the ranch and spicy portions, add ½ to 1 tablespoon olive oil to each bowl and toss to coat the chickpeas evenly. Add the respective spice mixtures to each bowl and toss again to ensure thorough coating.
- Sweet Flavor Final Step: Pour the maple syrup and cinnamon mixture over the sweet chickpeas and toss to coat. Return the sweet-coated chickpeas to the oven and bake for an additional 5-10 minutes to allow the sweetness to set and create a glaze.
- Serve: Remove the chickpeas from the oven and serve immediately while crisp for a perfect crunchy snack experience.
Notes
- Make sure chickpeas are completely dry before roasting to achieve maximum crispiness.
- Stirring during roasting ensures even cooking and browning.
- Adjust olive oil quantities slightly if needed to better coat the chickpeas.
- For extra crunch, roast a bit longer but watch carefully to avoid burning.
- Store leftover roasted chickpeas in an airtight container at room temperature for up to 2 days; they lose crispiness over time.
