Instructions
- Prep: Preheat the oven to 450°F with a rack in the center. Prepare all ingredients by dicing onion, chopping garlic and chipotle (if using), shredding cheese, and rinsing black beans. This prep ensures a quick cooking process once started.
- Sauté the Onion: Heat 1 tablespoon olive oil in a medium skillet over medium heat. Add the diced onion, season with 1 teaspoon kosher salt, and cook stirring occasionally until translucent and fragrant, about 3-4 minutes.
- Toast Aromatics: Stir in garlic and chipotle pepper or adobo sauce. Cook until fragrant, about 30 seconds. Add chili powder, cumin, smoked paprika, and tomato paste. Stir to coat the onion and cook 1-2 minutes until very fragrant.
- Make the Black Bean Filling: Add drained black beans to the skillet, stirring to combine with aromatics. Cook 1-2 minutes until beans are warmed through. Pour in vegetable broth and increase heat to bring mixture to a simmer. Slightly mash beans with a spatula to bind the filling. Cook 1-2 minutes more until slightly thickened. Squeeze lime juice over mixture, season with salt and pepper to taste, then remove from heat.
- Warm the Tortillas: Wrap corn tortillas in a damp paper towel and microwave for 30 seconds to steam and make them pliable for folding.
- Assemble the Tacos: Brush the remaining 2 tablespoons olive oil over a large rimmed baking sheet. Lightly oil both sides of each warmed tortilla by flipping on the baking sheet. Spread black bean filling over half of each tortilla, then sprinkle with shredded cheese. Fold the tortillas to create tacos, and carefully flip so the cheese side is down for crisping during baking.
- Bake the Tacos: Place the assembled tacos on the baking sheet in the preheated oven. Bake for 8-10 minutes, then carefully flip the tacos using a spatula. Bake another 8-10 minutes until tacos are golden, crispy, and cheese is melted. Remove from oven and let rest 2-3 minutes to crisp further.
- Serve: Serve the crispy black bean tacos warm with your choice of toppings such as cashew crema, cilantro, lime juice, salsa, or avocado. Enjoy immediately for best texture.
Notes
- For less spice, use only the adobo sauce instead of the whole chipotle pepper.
- To make this recipe vegan and dairy-free, use a vegan cheese substitute or omit the cheese.
- Use freshly shredded cheese for best melting—pre-shredded cheese often contains anti-caking agents that hinder melting.
- Leftover tacos can be stored wrapped airtight in the refrigerator for up to 2 days; reheat in the oven or air fryer to maintain crispiness.
- You can customize toppings to your preference—add pickled red onions, extra hot sauce, or fresh salsa verde.
