Crispy Smashed Potato Salad is a delightful twist on traditional potato salad, featuring tender baby Yukon gold potatoes that are boiled, smashed, and oven-roasted to golden crispiness. Tossed with fresh herbs, crunchy celery, pickles, scallions, and a creamy dressing made from Greek yogurt, mayo, and tangy pickle juice, this salad balances textures and flavors beautifully for a refreshing and hearty side dish perfect for gatherings or weeknight dinners.

  • Total Time: 55 minutes
  • Yield: 6 servings

Ingredients

Potatoes

  • 2 lbs baby Yukon gold potatoes
  • 2 tablespoons extra virgin olive oil or olive oil spray
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Salad Mix-ins

  • 1/4 cup fresh chopped dill
  • 1/4 cup fresh chopped parsley
  • 1/2 cup chopped celery
  • 1/3 cup chopped pickles
  • 1/4 cup chopped scallions
  • 1/3 cup crumbled feta cheese (optional)

Dressing

  • 1/2 cup plain Greek yogurt
  • 1/2 cup light mayo
  • 2 teaspoons Dijon mustard
  • 2 tablespoons pickle juice
  • 1 tablespoon garlic paste or minced garlic
  • Salt and pepper to taste

Instructions

  1. Boil the Potatoes: Add the baby Yukon gold potatoes to a medium pot and cover them with water. Bring to a boil and cook for 17-20 minutes until the potatoes are fork tender. Drain the potatoes thoroughly and place them on a clean towel to dry for a few minutes.
  2. Preheat the Oven: Line a baking sheet with parchment paper and preheat your oven to 425°F (220°C).
  3. Smash the Potatoes: Arrange the cooked potatoes on the lined baking sheet, spacing them apart. Using a small mason jar or thick glass, gently press down each potato until flattened to about 1/2 inch thick. Don’t worry if some crumble; just press the pieces back together.
  4. Brush with Olive Oil and Season: Lightly brush each smashed potato with olive oil and sprinkle evenly with kosher salt and ground black pepper.
  5. Bake to Crisp: Place the tray in the preheated oven and bake for 20-25 minutes until the potatoes are golden and crispy around the edges. Alternatively, you can air fry the smashed potatoes in batches for similar results.
  6. Let Potatoes Cool: Remove the potatoes from the oven and allow them to cool for a few minutes to firm up.
  7. Prepare the Dressing: In a medium bowl, whisk together the Greek yogurt, light mayonnaise, Dijon mustard, pickle juice, garlic paste, salt, and pepper until smooth and well combined.
  8. Assemble the Salad: In a large salad bowl, combine the crispy smashed potatoes with chopped dill, parsley, celery, pickles, scallions, and crumbled feta cheese if using.
  9. Toss with Dressing: Using tongs or large spoons, gently toss the salad ingredients to evenly coat everything with the creamy dressing.
  10. Garnish and Serve: Top the salad with extra chopped scallions, fresh herbs, and additional feta cheese for garnish. Serve immediately and enjoy your crispy smashed potato salad!

Notes

  • Use baby Yukon gold potatoes for the best texture and flavor; they hold up well when smashed and baked.
  • Make sure to dry the potatoes well after boiling to get maximum crispiness when baked.
  • If you prefer a lighter version, substitute light mayo with extra Greek yogurt.
  • The salad can be served warm, at room temperature, or chilled according to preference.
  • Adding feta cheese is optional but recommended for a tangy and creamy addition.
  • You can substitute fresh herbs based on availability, such as chives or tarragon.
  • To save time, the potatoes can be prepared a day ahead and assembled just before serving.
