Ingredients
Rice Base
- 1 1/2 cups dry sushi rice (rinsed until water is clear)
- 2 cups water
Seasoning
- 1 teaspoon salt
- 3 tablespoons rice vinegar
- 1 tablespoon granulated sugar
- 1 teaspoon toasted sesame oil
- 1/2 to 3/4 cup vegetable oil (for pan-frying)
Frying
Instructions
- Prepare the rice. Thoroughly rinse the sushi rice 4-5 times until the water runs clear to remove excess starch. Cook the rice with 2 cups of water using a rice cooker or stovetop method until fully cooked and tender.
- Season the rice. In a small bowl, combine the salt, rice vinegar, granulated sugar, and toasted sesame oil, stirring until the sugar dissolves completely. Toss this seasoning mixture with the freshly cooked rice in a large bowl to evenly distribute the flavors.
- Shape and refrigerate the rice. Line a small square baking tray with plastic wrap and transfer the seasoned rice into it. Press and shape the rice into a compact 1/2-inch thick square block. Wrap firmly with plastic wrap and refrigerate for at least 3 hours or overnight to allow the rice to slightly dry and firm up, enabling easier cutting.
- Shape the rice. Remove the chilled rice block from the refrigerator and cut it into bite-sized rectangles. Gently pat any excess moisture off the rice pieces to prevent oil splatter during frying.
- Pan-fry the rice. Heat about 1/2 to 3/4 cup vegetable oil in a medium skillet over medium-high heat until the oil is hot, approximately 30 seconds. Carefully place the rice pieces in the pan, leaving at least 2 inches between each piece to ensure even frying and prevent sticking. Fry each side for 1-2 minutes or until golden brown and crispy. Flip and repeat for the other side. Once done, remove the rice from the skillet and place on a wire rack set over a lined baking sheet to drain excess oil.
Notes
- Ensure the rice is well chilled and firm before cutting to maintain shape during frying.
- Use sushi rice for the best texture and stickiness to hold together when shaping.
- Be cautious when pan-frying as the vegetable oil may splatter due to moisture in the rice.
- Adjust seasoning to taste if a sweeter or more savory flavor is preferred.
- Serve crispy rice hot as a snack, appetizer, or side with dipping sauces like soy sauce or spicy mayo.
