This easy Crock Pot Chicken and Dumplings recipe is the ultimate comfort food, combining tender chicken, mixed vegetables, and creamy broth with fluffy biscuit dumplings all cooked effortlessly in a slow cooker. Perfect for a cozy meal any day of the week.

  • Total Time: 6 hours 5 minutes
  • Yield: 6 servings

Ingredients

Chicken and Vegetables

  • 3 boneless skinless chicken breasts
  • 12 oz frozen mixed vegetables (peas and carrots only)
  • ½ onion, chopped finely

Broth and Seasonings

  • 2 cans cream of chicken soup (10.5 oz each)
  • 2 cups chicken broth
  • 1 tsp garlic salt
  • ½ tsp poultry seasoning
  • 1 tsp salt
  • ½ tsp pepper

Dumplings

  • 1 can biscuits (10 count)

Instructions

  1. Prepare the Base: Place the chicken breasts, frozen mixed vegetables, and finely chopped onion in the crock pot to form the flavorful base of the dish.
  2. Add Creamy Ingredients and Seasonings: Pour in the cream of chicken soup and sprinkle the garlic salt, poultry seasoning, salt, and pepper over the ingredients inside the crock pot.
  3. Pour Chicken Broth: Add 2 cups of chicken broth on top of all the ingredients for moisture and enhanced flavor.
  4. Cook Chicken and Vegetables: Cover and cook the mixture on low heat for 6 hours or on high for 3 hours until the chicken is fully cooked and tender.
  5. Shred Chicken: Once cooked, remove the chicken breasts, shred them using two forks, and return the shredded chicken back into the crock pot.
  6. Add Dumplings: Cut the biscuits into quarters and place these pieces evenly over the mixture in the crock pot.
  7. Cook Dumplings: Cover and cook on high for 60 to 90 minutes until the biscuit pieces are cooked through and fluffy, stirring occasionally to prevent sticking.
  8. Serve and Enjoy: Once the dumplings are cooked, serve the chicken and dumplings warm for a comforting meal.

Notes

  • You can substitute fresh vegetables if preferred, adjusting the cooking time accordingly.
  • For a thicker broth, reduce the amount of chicken broth slightly or add a slurry of cornstarch and water before adding the dumplings.
  • Stir occasionally while the dumplings are cooking to avoid sticking and ensure even cooking.
  • If you prefer less salt, reduce the added salt and seasonings to taste.
  • The biscuits can be replaced with homemade dough for a more traditional dumpling texture.
