  • Total Time: 1 hr 45 mins
  • Yield: 6-8 servings

Ingredients

Meat and Seasoning

  • 1 pound ground beef, browned and crumbled
  • 1 package taco seasoning

Vegetables and Beans

  • 1 (10 ounce) can RO*TEL Original Diced Tomatoes and Green Chilis
  • 1 (15.25 ounce) can corn, drained
  • 1 (15 ounce) can black beans, drained and rinsed

Dairy

  • 8 ounces cream cheese
  • 2 cups Monterey Jack cheese, shredded

Instructions

  1. Prepare the Ground Beef: Brown and crumble the ground beef in a skillet over medium heat until fully cooked. Drain excess fat if necessary.
  2. Combine Ingredients in Slow Cooker: Add the browned ground beef, RO*TEL diced tomatoes and green chilis, drained corn, rinsed black beans, and taco seasoning to the crock pot. Stir thoroughly to combine all ingredients evenly.
  3. Cook on Low: Cover the slow cooker and cook on the low setting for 60 minutes, allowing the flavors to meld.
  4. Add Cream Cheese and Cheese: Stir in the cream cheese and shredded Monterey Jack cheese until well mixed into the dip.
  5. Continue Cooking: Cover and cook for an additional 30 minutes on low, ensuring the cheese melts completely and the dip is warm and creamy.
  6. Serve: Serve the taco dip warm with tortilla chips or your favorite dipping snacks.

Notes

  • Use slow cooker liners for easy cleanup.
  • Make sure to stir well after adding cream cheese to avoid clumps.
  • You can substitute black beans with pinto beans if preferred.
  • Adjust taco seasoning according to taste preference and salt content.
  • For a spicier dip, use RO*TEL with mild or hot diced tomatoes.
