Ingredients
Chicken and Seasonings
- 1 pound chicken breast (thawed)
- 1 tablespoon better than bouillon (chicken flavor)
- 1 tablespoon Italian seasoning
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 yellow onion (diced)
Sauce and Pasta
- 28 oz Rao’s marinara pasta sauce
- 1/2 cup water
- 24 oz cheese tortellini
Dairy
- 1 cup heavy cream
- 1 cup mozzarella cheese (shredded)
Instructions
- Prepare the Crockpot: Spray a crock pot with nonstick cooking spray to prevent sticking. Add the raw chicken breast and spread 1 tablespoon of better than bouillon (chicken flavor) over the chicken.
- Season the Chicken: Sprinkle the chicken evenly with Italian seasoning, garlic powder, onion powder, kosher salt, and black pepper. Add the diced yellow onion on top.
- Add Sauce and Cook: Pour in 28 oz of Rao’s marinara pasta sauce and 1/2 cup water to moisten the mixture. Cover the crock pot and cook on HIGH for 3 hours or on LOW for 5 to 6 hours until the chicken is thoroughly cooked and tender.
- Shred Chicken & Add Ingredients: Carefully remove the cooked chicken from the crock pot and shred it using two forks. Return the shredded chicken to the pot along with 24 oz of cheese tortellini and 1 cup of heavy cream. Stir gently to combine.
- Add Cheese & Finish Cooking: Sprinkle 1 cup of shredded mozzarella cheese evenly on top. Cover and cook for an additional 1 hour on HIGH or until the tortellini is tender and the cheese is melted and bubbly.
- Serve: Once cooked, serve hot. Optionally garnish with fresh parsley and enjoy with a side of breadsticks or garlic bread for a complete comforting meal.
Notes
- You can adjust the seasoning quantities to suit your taste.
- Use fresh parsley for garnish to add a bright, fresh flavor.
- Substitute cheese tortellini with spinach or meat tortellini if preferred.
- If you prefer a thicker sauce, reduce the amount of water slightly or cook uncovered for the last 30 minutes.
- For a lighter version, substitute heavy cream with half-and-half, but the sauce will be less rich.
