Ingredients
Beef and Seasoning
- 3 pounds beef chuck roast
- 1 tablespoon olive oil
- 1 packet ranch seasoning mix
- 1 packet au jus gravy mix
- 4 whole pepperoncini
- 4 cups low sodium beef broth
- ¼ cup juice from jar of pepperoncini
Noodles and Finishing Touches
- 16 ounces dried egg noodles
- ¼ cup butter
- Fresh minced parsley for garnish
Instructions
- Sear the beef: Heat a large skillet over high heat until hot. Add the olive oil and heat until shimmering. Add the chuck roast and sear on all sides until nicely browned, creating a flavorful crust.
- Prepare the crockpot: Transfer the seared roast to a 6-quart crockpot. Sprinkle the ranch seasoning mix and au jus gravy mix evenly over the beef. Top with whole pepperoncini, beef broth, and the juice from the pepperoncini jar.
- Slow cook the beef: Cover the crockpot and cook on low for 8 hours (or on high for 5 hours), until the beef is fork-tender and shreds easily. Cooking time may vary depending on your crockpot.
- Shred and mix beef: Remove the beef from the crockpot and shred it using two forks. Stir the shredded beef back into the broth in the crockpot.
- Add noodles and butter: Add the dried egg noodles into the crockpot and stir gently to combine with the beef and broth. Top with pats of butter distributed over the noodles.
- Cook noodles in crockpot: Cover and cook on high for 20-30 minutes until the noodles are tender. Check at 20 minutes to avoid overcooking, as crockpot performance may vary.
- Serve: Stir the noodles and beef mixture thoroughly, then serve hot, garnished with fresh minced parsley for a pop of color and freshness.
Notes
- For best results, sear the beef prior to slow cooking to develop deeper flavors and richer color.
- If you prefer faster cooking, use the high setting on the crockpot for 5 hours instead of low for 8 hours.
- Check noodle doneness early to prevent mushiness, as some crockpots cook hotter than others.
- Using low sodium beef broth helps control the salt content since seasoning packets and pepperoncini add saltiness.
- This recipe is excellent for meal prepping and leftover-friendly, reheating well in the microwave or on the stovetop.
