Ingredients
Onions
- 3 large onions (or 4 medium onions)
Seasoning & Oil
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Dip Base
- 1/2 cup sour cream
- 4 ounces cream cheese (half brick), softened
- 1/2 cup mayonnaise
- 2 teaspoons hot sauce (optional)
Instructions
- Prepare the onions: Start by halving each onion, removing the root ends, and peeling off the outer skin. Then slice each half into thin, even strips to ensure they cook down uniformly.
- Cook the onions: Place all the sliced onions into the crockpot. Drizzle the olive oil over them, then sprinkle with salt and black pepper. Toss everything together so the onions are evenly coated. Cover the crockpot and cook on the low setting for 8 hours. You can also leave the dip on the “keep warm” setting after cooking if not serving immediately.
- Make the dip: Once the onions are fully cooked and caramelized, stir in the sour cream, softened cream cheese, mayonnaise, and optional hot sauce. Mix thoroughly until the dip is smooth and all ingredients are well combined. Taste and adjust seasoning with additional salt and pepper if needed. For a thicker dip, you can drain off some of the onion juices, but keeping them adds extra flavor.
- Serve the dip: To serve warm, keep the dip in the slow cooker on the “keep warm” setting. To enjoy it cold, transfer the dip to a container and refrigerate for at least 1 hour before serving.
Notes
- For best flavor, use sweet onions like Vidalia or yellow onions.
- The 8-hour slow cooking process allows the onions to caramelize perfectly without burning.
- If you prefer a spicier dip, increase the amount of hot sauce or add a dash of cayenne pepper.
- This dip pairs well with fresh vegetable sticks, crackers, or chips.
- You can prepare the onions a day ahead and keep them refrigerated before mixing in the remaining ingredients.
- The dip can be stored covered in the refrigerator for up to 3 days.
