These Crunchy Sourdough Breadsticks, also known as Sourdough Grissini, are a delightful snack with a crisp texture and a subtle tangy flavor from the sourdough starter. Perfectly seasoned and optionally coated with sesame seeds, they are ideal for serving with dips or as a standalone treat. Made with wholesome ingredients and baked to a golden crisp in just 40 minutes, they offer an easy and tasty way to enjoy sourdough baking.

  • Total Time: 40 minutes
  • Yield: 12 servings

Ingredients

Dough Ingredients

  • 200 g Sourdough Starter (or sourdough discard)
  • 115 g Whole Wheat Flour (or All Purpose Flour)
  • 5 g Salt
  • 25 g Olive Oil
  • 25 g Maple Syrup

For Topping

  • 20 g Olive Oil (for brushing)
  • 10 g Sea Salt (for sprinkling)
  • 20 g Sesame Seeds (optional, for rolling)

Instructions

  1. Mix Ingredients: Add sourdough discard, flour, olive oil, salt, and maple syrup to a mixing bowl and combine them until a shaggy dough forms.
  2. Knead Dough: Knead the dough in the bowl until it becomes smooth and pliable. It will be slightly sticky but manageable; if too sticky, add a small amount of additional flour.
  3. Rest Dough: Let the dough rest briefly to relax it, acting as a mini bulk ferment, without allowing it to rise significantly.
  4. Divide Dough: Using a scale, portion the dough into equal pieces of 30 g each to make breadsticks approximately 27 cm long.
  5. Shape Breadsticks: Roll each portion into a long, thin stick shape, then roll them in sesame seeds or any preferred seed, or leave plain.
  6. Place on Tray: Arrange the breadsticks on a parchment-lined baking tray, spaced slightly apart.
  7. Proof Breadsticks: Cover the breadsticks with a damp dish towel and allow them to rest for about an hour.
  8. Preheat Oven & Prepare: Preheat the oven to 350ºF (180ºC). Brush the breadsticks with olive oil and sprinkle them with sea salt.
  9. Bake: Bake the breadsticks for approximately 25 minutes or until golden and crisp.
  10. Cool and Dry: After baking, leave the breadsticks in the oven with the door slightly open to dry out completely and maintain crunchiness.

Notes

  • Use sourdough discard to avoid waste and impart signature flavor.
  • Adjust flour types according to preference or dietary needs, whole wheat for nuttier taste, or all-purpose for lighter texture.
  • Sesame seeds are optional and can be substituted with poppy seeds, flaxseeds, or omitted entirely.
  • Ensure dough is not too sticky to facilitate shaping; add flour sparingly if needed.
  • Allowing the breadsticks to dry in the oven after baking enhances crispness and shelf life.
  • Store baked breadsticks in an airtight container to keep them crunchy.
