Ingredients
Cream Cheese Spread
- 8 oz cream cheese, softened
- 1/4 cup mayonnaise
- 2 teaspoons fresh dill, chopped
- 1 teaspoon fresh green onions, chopped
- 1 teaspoon lemon zest
- 1 teaspoon lemon juice
- 1/4 teaspoon garlic powder
- 1/8 teaspoon onion powder
- Salt & pepper, to taste
Sandwich Assembly
- 1 long English cucumber, thinly sliced
- 1 loaf sliced white bread, crusts removed
Instructions
- Make the cream cheese mixture: In a small bowl, whisk together the softened cream cheese and mayonnaise using a hand mixer until the mixture is smooth and creamy.
- Add herbs and flavorings: Stir in the chopped fresh dill, chopped green onions, lemon zest, lemon juice, garlic powder, and onion powder. Season with salt and pepper to taste, mixing well to fully combine.
- Spread the mixture on bread: Evenly spread the cream cheese herb mixture onto all the slices of bread, ensuring a generous layer for flavor and moisture.
- Slice the cucumbers: Thinly slice the English cucumber into even rounds to create a crisp, fresh layering for the sandwiches.
- Assemble the sandwiches: Layer cucumber slices over half of the bread slices that have the spread. Optionally, sprinkle additional fresh herbs over the cucumber for extra flavor.
- Top with remaining bread slices: Cover the cucumber layers with the remaining bread slices, cream cheese side down, to form complete sandwiches.
- Trim and cut: Remove the crusts from the sandwiches with a sharp knife. Then cut each sandwich into three evenly-sized pieces for elegant serving.
- Serve or store: Serve the cucumber sandwiches immediately for best freshness. Alternatively, cover and refrigerate in an airtight container for up to 24 hours before serving.
Notes
- For best results, use very thin cucumber slices for a delicate texture.
- Chilling the cream cheese mixture before spreading can make it easier to handle.
- Try using whole wheat or multigrain bread for a healthier version.
- Adding fresh mint leaves along with the dill can add a refreshing twist.
- If storing, avoid adding cucumbers until just before serving to prevent sogginess.
