This tender and moist chocolate cake is easy to make from scratch and features outrageously soft layers paired with rich, fudgy chocolate frosting. Perfect for chocolate lovers, it’s a one-bowl recipe with a delightful coffee-infused batter that enhances the chocolate flavor.

  • Total Time: 1 hour 45 minutes
  • Yield: 12 slices

Ingredients

For the Chocolate Cake:

  • 2 cups (260g) all-purpose flour
  • 1 ½ cups (300g) granulated sugar
  • 1 cup (90g) unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup (240mL) milk
  • ½ cup (120mL) vegetable oil (or any neutral flavored oil)
  • 2 teaspoons pure vanilla extract
  • 1 cup (240mL) hot black coffee

For the Chocolate Fudge Frosting:

  • 1 cup (90g) unsweetened cocoa powder
  • 4 cups (480g) powdered sugar
  • 1 ½ cups (340g) unsalted butter, softened to room temperature
  • ¼ teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 3-5 tablespoons milk

Instructions

  1. Prepare pans: Preheat the oven to 350°F. Butter two 9-inch round cake pans and line the bottoms with parchment paper circles. Lightly dust the sides with flour or cocoa powder and tap out excess. Set aside.
  2. Mix dry ingredients: In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. Add wet ingredients: Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients and whisk until just combined into a thick batter. Avoid over-mixing.
  4. Add coffee: Pour hot black coffee over the batter and whisk immediately to combine. The batter will thin out significantly, which is expected.
  5. Bake the cakes: Evenly pour the batter into the prepared pans and bake in the center of the oven for 20-25 minutes or until a skewer inserted in the center comes out clean with a few moist crumbs.
  6. Cool cakes: Allow the cakes to cool in the pans for about 10 minutes, then transfer to a wire rack. Remove parchment paper and let cool completely to room temperature.
  7. Make frosting: Sift together cocoa powder and powdered sugar into a large bowl, then add softened butter. Using an electric mixer with paddle attachment, mix on low speed until sugar and cocoa dissolve. Scrape bowl.
  8. Finish frosting: Add salt, vanilla extract, and 3 tablespoons milk to the bowl. Mix on low speed to combine, then increase to high and whip for about 1 minute until smooth and fluffy. Add more milk if frosting is too thick.
  9. Assemble cake: Place one cake layer on a serving platter and spread one-third of the frosting on top. Place the second cake layer on top and cover the top and sides with the remaining frosting.
  10. Serve: Slice and enjoy your rich, moist chocolate cake!

Notes

  • You can use any neutral flavored oil if you prefer not to use vegetable oil.
  • Hot coffee enhances the chocolate flavor but can be substituted with hot water if desired.
  • Be careful not to over-mix the batter to keep the cake tender and moist.
  • For best results, allow the cake to cool completely before frosting to avoid melting the frosting.
  • Frosting consistency can be adjusted with more or less milk depending on preference.
