Ingredients
Beef and Cheese
- 1 lb thinly sliced ribeye or sirloin beef
- 8 oz provolone cheese, sliced
Vegetables
- 1 cup mixed bell peppers, chopped
- 1 medium sweet onion, chopped
Other Ingredients
- 2 tbsp extra virgin olive oil
- 4 low-carb tortillas
- Salt, to taste
- Black pepper, to taste
Instructions
- Prepare Ingredients: Slice the ribeye or sirloin beef into thin strips and chop the mixed bell peppers and sweet onion into bite-sized pieces.
- Sauté Vegetables: Heat 2 tablespoons of extra virgin olive oil in a skillet over medium heat. Add the chopped onions and bell peppers and cook for about 5 to 7 minutes until softened and lightly caramelized.
- Cook Beef: Increase the heat to medium-high and add the sliced beef to the skillet. Season with salt and black pepper to taste. Cook the beef until it turns brown and is cooked through, approximately 3 to 5 minutes.
- Melt Cheese: Reduce the heat to low and layer slices of provolone cheese over the beef and vegetable mixture in the skillet. Cover the skillet or allow the cheese to melt completely over low heat.
- Assemble Roll Ups: Spoon the cheesy beef and vegetable mixture evenly onto each of the 4 low-carb tortillas. Roll each tortilla tightly around the filling to form roll-ups.
- Crisp Roll Ups: Place the roll-ups seam-side down back into the skillet over medium heat. Cook for about 3 to 4 minutes, turning occasionally, until all sides are golden brown and slightly crisp.
Notes
- For a spicier version, add sliced jalapeños or a dash of hot sauce to the filling.
- Use low-carb tortillas to keep the dish keto-friendly.
- Leftover roll-ups can be refrigerated for up to 2 days and reheated in a skillet or oven for best texture.
- Feel free to substitute provolone with mozzarella or cheddar cheese based on preference.
- Make sure to slice the beef thinly for quicker cooking and tender bites.
