A creamy, chilled Deviled Egg Pasta Salad that combines the classic flavors of deviled eggs with tender elbow pasta and a tangy, flavorful dressing. Perfect as a refreshing side dish for picnics, barbecues, or potlucks.

  • Total Time: 2 hours 30 minutes
  • Yield: 4 servings

Ingredients

Salad

  • 8 oz dried elbow pasta
  • 6 large hard boiled eggs
  • 1/2 cup finely diced celery
  • 1/2 cup sliced green onions
  • 1/4 cup finely diced red onion

Dressing

  • 3/4 cup mayonnaise
  • 1 1/2 Tbsp dijon mustard
  • 1 Tbsp granulated sugar
  • 1 tsp apple cider vinegar
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Prepare: Bring a large pot of water to a boil. Once boiling, add salt according to your preference to season the pasta water.
  2. Boil and drain: Add the dried elbow pasta to the boiling salted water and cook according to the package directions until al dente, approximately 8-10 minutes. Drain the pasta in a colander and rinse well with cold water to stop the cooking process and cool the pasta. Let it continue draining while you prepare the rest.
  3. Make dressing: Slice the hard boiled eggs in half and separate the egg whites from the yolks. Dice the egg whites and set aside. Place the egg yolks into a small mixing bowl and mash with a fork until smooth, or alternatively, pulse in a food processor until creamy. Add the mayonnaise, dijon mustard, granulated sugar, apple cider vinegar, paprika, salt, and pepper to the mashed yolks. Stir thoroughly until the dressing is well combined. Set aside.
  4. Assemble salad: In a large mixing bowl, combine the drained and cooled pasta, chopped egg whites, diced celery, sliced green onions, and diced red onion. Pour the prepared dressing over the salad ingredients and gently mix until everything is evenly incorporated.
  5. Chill: Cover the mixing bowl tightly with plastic wrap or a lid, and refrigerate the pasta salad for 1-2 hours, preferably 2 or more hours, to allow the flavors to meld and the salad to chill thoroughly.
  6. Serve: Before serving, give the pasta salad a good stir to redistribute the dressing. Serve cold as a refreshing side dish.

Notes

  • Salting the pasta water enhances flavor but salt quantity is optional based on dietary preferences.
  • Use freshly boiled and cooled hard boiled eggs for best texture in the salad.
  • Chilling the salad for at least two hours develops richer flavor and improves texture.
  • Adjust seasoning of the dressing to taste, especially salt and pepper.
  • This salad pairs well with BBQ dishes, sandwiches, or as a potluck side.
