A classic Dutch Oven Pot Roast featuring a tender, slow-braised beef chuck roast with aromatic vegetables and a rich, savory gravy. This comforting meal is perfect for a hearty family dinner and uses simple ingredients cooked low and slow to develop deep flavors.

  • Total Time: 4 hours 30 minutes
  • Yield: 6 servings

Ingredients

Meat and Seasoning

  • 3-4 pounds boneless beef chuck roast
  • Salt, to taste
  • Black pepper, to taste

For Searing and Flavor Base

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 1 rib celery, diced
  • 2 cloves garlic, smashed
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce

Liquids and Vegetables

  • 3 cups chicken stock
  • 1 pound Yukon gold potatoes, cut in halves or quarters
  • 1 pound carrots, diced

Gravy Thickener

  • 2 tablespoons cornstarch
  • 1/4 cup cold water

Instructions

  1. Preheat and Prep the Meat: Preheat your oven to 300°F. Pat the chuck roast dry with paper towels to ensure a better sear. Generously season all sides with salt and pepper to enhance flavor.
  2. Sear the Roast: Heat 2 tablespoons of olive oil in a large Dutch oven over medium-high heat. Once the oil is hot and shimmering, add the roast. Sear undisturbed for 5-7 minutes per side until a deep golden-brown crust forms, locking in the juices and building flavor. Remove the roast to a plate and set aside.
  3. Build the Flavor Base: Reduce the heat to medium-low. Add diced onion and celery to the pot, scraping up any browned bits from the bottom. Cook for 8-10 minutes until softened and beginning to caramelize. Stir in smashed garlic, tomato paste, and Worcestershire sauce; cook for an additional minute until fragrant.
  4. Deglaze and Braise: Pour in the chicken stock, stirring to deglaze the pot and incorporate all the browned bits. Return the seared roast and any accumulated juices back into the Dutch oven. Bring the liquid to a gentle boil, then cover tightly with the lid. Transfer the pot to the preheated oven and braise for 2 hours at 300°F, allowing the meat to start tenderizing.
  5. Add Vegetables: Carefully remove the pot from the oven. Add the diced potatoes and carrots, submerging them evenly in the braising liquid. Cover again and return the pot to the oven for an additional 1 to 1.5 hours, or until the roast is fork-tender and the vegetables are soft but maintain their shape.
  6. Thicken the Gravy: Transfer the roast and vegetables to a serving platter, tent with foil to keep warm. Skim excess fat from the braising liquid if necessary. Place the pot on the stovetop over medium heat and bring the liquid to a simmer. In a small bowl, whisk cornstarch with cold water until smooth. Gradually stir this slurry into the simmering liquid and cook for 2-3 minutes until the gravy thickens. Season with salt and pepper to taste.
  7. Serve: Slice or shred the roast as desired. Pour the rich gravy over the meat and vegetables. Garnish with chopped fresh parsley if desired and serve hot for a comforting meal.

Notes

  • Patting the meat dry before searing ensures a better crust formation.
  • Use a heavy Dutch oven (6-8 quart) for even heat distribution during braising.
  • Be sure not to skip the searing step to develop deep flavor.
  • If you prefer thicker gravy, slowly add more cornstarch slurry while stirring.
  • Leftovers can be refrigerated for up to 3 days and reheated gently to preserve tenderness.
