Ingredients
Noodles and Vegetables
- 8 oz Dry Egg Noodles (package or fresh)
- 2 Carrots, sliced
- 1/4 Yellow Onion, sliced
- 3 cups Cabbage, thinly sliced (about 1/4 large cabbage)
- 3 Garlic Cloves, diced
- 1 bunch Green Onion (green part only), sliced
Sauce
- 2 tbsp Dark Soy Sauce
- 2 tbsp Soy Sauce
- 2 tbsp Brown Sugar (or regular sugar)
- 1 tbsp Water
- 1 tsp Sesame Oil
- 1 tbsp Corn Starch
- 1/4 tsp White Pepper
- 1 tbsp Oyster Sauce
Instructions
- Prep Vegetables: Start by slicing your onion, carrots, cabbage, garlic, and green onion. Set all the prepared vegetables aside for later use.
- Make Sauce: In a bowl, combine dark soy sauce, soy sauce, brown sugar, corn starch, water, oyster sauce, sesame oil, and white pepper. Mix thoroughly until all ingredients are well incorporated and the corn starch is dissolved.
- Cook Noodles: Bring a pot of water to a boil and cook the egg noodles for about 5 minutes until tender but still firm. Drain the noodles and rinse them under cold water to stop the cooking process and prevent sticking.
- Stir-Fry Vegetables: Heat a hot pan or wok over medium-high heat. Add the diced garlic, sliced carrots, and onions, cooking for 2 minutes while stirring frequently. Next, add the thinly sliced cabbage and continue stir-frying for another 2 minutes until vegetables are tender-crisp.
- Combine Noodles and Sauce: Add the drained noodles, prepared sauce, and sliced green onions to the pan. Stir everything together and cook for 1 additional minute, ensuring the noodles are fully coated with the sauce and heated through.
- Serve: Transfer the Lo Mein to a serving plate and enjoy immediately while hot.
Notes
- Use fresh or dried egg noodles depending on availability; adjust cooking time if needed.
- For a vegetarian version, omit oyster sauce or replace it with mushroom sauce.
- Feel free to add protein like chicken, shrimp, or tofu for a more filling meal.
- To enhance flavor, toast the sesame oil slightly before adding garlic.
- Adjust sugar or soy sauce amounts to taste for preferred sweetness and saltiness.
