Ingredients
Protein and Broth
- 2 pounds boneless skinless chicken breasts
- 6 cups homemade chicken stock
Flavors and Seasonings
- 1 tbsp grated fresh ginger
- 3 garlic cloves, minced
- 1 tbsp olive oil
- 1 ½ tbsp coconut aminos
- salt, black pepper to taste
Egg Mixture
- 3 large eggs
- 1 tbsp sesame oil
- pinch of salt
Garnish
- 3 tbsp sliced scallions
Instructions
- Prepare the Slow Cooker: Place the chicken breasts, grated fresh ginger, minced garlic, olive oil, homemade chicken stock, and coconut aminos into the slow cooker. Stir gently to combine the ingredients.
- Slow Cook the Soup: Cover the slow cooker with a lid and cook the mixture on high for 4 hours. This slow cooking process allows the chicken to become tender and the flavors to meld beautifully.
- Shred the Chicken: Once cooked, remove the chicken breasts from the slow cooker and shred them thoroughly using two forks. Return the shredded chicken back to the slow cooker to mix with the broth.
- Prepare the Egg Mixture: In a small bowl, whisk together the eggs, sesame oil, and a pinch of salt until fully combined and slightly frothy.
- Incorporate the Eggs: Slowly pour the whisked egg mixture into the hot soup while stirring gently to create delicate egg ribbons throughout the broth.
- Season and Serve: Taste the soup and season with additional salt and freshly ground black pepper as needed. Serve the soup hot, topped generously with sliced scallions for a fresh, vibrant finish.
Notes
- Homemade chicken stock is recommended for best flavor, but store-bought low-sodium chicken broth can be used as a substitute.
- For a richer flavor, you can toast the garlic and ginger lightly in olive oil before adding them to the slow cooker.
- Whisking the egg mixture in sesame oil adds a nutty aroma but can be replaced with regular oil if unavailable.
- If you prefer thicker soup, you can remove some broth before adding eggs and thicken it with a small slurry of arrowroot powder and water, then return the shredded chicken and egg mixture.
