This easy apple cinnamon oatmeal is a cozy, autumn-inspired vegan breakfast featuring cinnamon-spiced caramelized apples and hearty rolled oats cooked in almond milk. It’s a deliciously warm and nutritious way to start your day with natural sweetness and comforting flavors.

  • Total Time: 28 minutes
  • Yield: 2 servings

Ingredients

Caramelized Apples

  • 1 apple, diced small
  • 1/2 tablespoon vegan butter
  • 2 tablespoons maple syrup
  • 1/4 teaspoon cinnamon or pumpkin pie spice
  • Pinch of salt
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon vanilla extract

Oatmeal

  • 1 cup unsweetened almond milk
  • 1 1/4 cups water
  • 1 cup rolled oats
  • 1/2 teaspoon cinnamon or pumpkin pie spice
  • Big pinch of salt
  • Splash of maple syrup
  • Chopped walnuts or pecans, for serving

Instructions

  1. Prepare Caramelized Apples: In a small pan over medium heat, melt the vegan butter. Add the diced apples and cook for a couple of minutes until they start to soften. Stir in the maple syrup, cinnamon or pumpkin pie spice, and a pinch of salt. Continue cooking the mixture for 6-8 minutes until the liquid has evaporated and the apples are tender. Remove from heat and mix in the lemon juice and vanilla extract to enhance the flavors.
  2. Cook the Oatmeal: In a small pot, combine the water and unsweetened almond milk and bring to a boil. Stir in the rolled oats, cinnamon or pumpkin pie spice, a big pinch of salt, and a splash of maple syrup. Reduce the heat to low and cover with a tilted lid. Let it simmer gently for about 8 minutes, stirring occasionally, until the oats are soft and the mixture has thickened.
  3. Assemble and Serve: Once the oatmeal is cooked, transfer it to a bowl. Top generously with the warm caramelized apples and sprinkle with chopped walnuts or pecans for added texture and flavor. Serve immediately and enjoy a comforting, wholesome breakfast.

Notes

  • You can substitute maple syrup with agave or honey if not strictly vegan.
  • Adjust the sweetness by adding more or less maple syrup according to taste.
  • For a creamier texture, use oat milk or soy milk instead of almond milk.
  • Add fresh fruit like sliced bananas or berries as additional toppings.
  • Use gluten-free oats if you need a gluten-free version.
  • Store leftover oatmeal in the refrigerator for up to 3 days; reheat with a splash of almond milk.
