This Easy Apple Pie Filling Coffee Cake combines the comforting flavors of apple pie with a tender, moist coffee cake layered with a cinnamon brown sugar streusel and finished with a sweet powdered sugar glaze. Perfect for breakfast, brunch, or a cozy dessert.

  • Total Time: 1 hour 15 minutes
  • Yield: 12 servings

Ingredients

Streusel

  • ¾ cup Yellow Cake Mix
  • 1 cup Brown Sugar, packed (use ½ cup for streusel, remainder in batter)
  • 1 teaspoon Cinnamon (half of the 2 teaspoons)
  • ¼ cup Butter, melted

Cake Batter

  • ½ cup Yellow Cake Mix (remaining from 1 box 15.25 ounces)
  • 2 Eggs
  • ½ cup Sour Cream
  • 1 teaspoon Cinnamon (remaining half)
  • ½ can Apple Pie Filling (10.5 ounces)

Glaze

  • 1 cup Powdered Sugar
  • 3 tablespoons Milk (add more if needed for consistency)

Instructions

  1. Prepare: Preheat your oven to 350°F (175°C) and thoroughly grease a bundt or tube pan to prevent sticking.
  2. Make the streusel: In a mixing bowl, combine ¾ cup of yellow cake mix, ½ cup of brown sugar, 1 teaspoon of cinnamon, and melted butter. Mix well with a spoon until a crumbly texture forms.
  3. Make the cake batter: In a separate bowl, blend the remaining yellow cake mix, 2 eggs, sour cream, and 1 teaspoon cinnamon using an electric hand mixer until smooth. Gently fold in the apple pie filling to preserve chunkiness.
  4. Assemble the cake: Spread half of the cake batter evenly into the bottom of the prepared pan. Sprinkle half of the streusel mixture over the batter. Repeat layers with the remaining batter and streusel.
  5. Bake the cake: Place the pan in the middle rack of the oven and bake uncovered for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
  6. Ice the cake: Allow the cake to cool completely. Once cool, invert the cake onto a large cutting board or plate and remove the pan. In a bowl, whisk together powdered sugar and milk until smooth and drizzleable, adding more milk if necessary. Drizzle the glaze over the cooled cake before serving.

Notes

  • Make sure the cake is completely cool before adding the glaze to prevent it from melting.
  • You can substitute apple pie filling with homemade cooked apples for a fresher taste.
  • For extra texture, try adding chopped nuts to the streusel.
  • Use a bundt pan for a pretty shape, but a tube pan or round cake pan works too.
  • Store leftovers covered at room temperature for up to 2 days or refrigerate for up to 4 days.
