Ingredients
Beef and Seasonings
- 1.25 pound sirloin steak (or skirt steak or flank steak)
- 1 tsp cumin
- 0.5 tsp chili powder
- 0.5 tsp paprika
- 0.25 tsp cayenne pepper
- Salt and pepper, to taste
Vegetables and Oil
- 2 tbsp olive oil, divided
- 1 large sweet onion, sliced
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
Instructions
- Preheat skillet: Heat a large cast iron skillet over high heat until very hot, then add 1 tablespoon of olive oil, ensuring the pan is well coated.
- Season steak: In a small bowl, mix cumin, chili powder, paprika, cayenne pepper, salt, and pepper. Sprinkle this seasoning blend evenly on both sides of the sirloin steak.
- Sear steak: Place the seasoned steak in the hot skillet and sear for 3-5 minutes per side, depending on desired doneness (about 3 minutes each side for medium rare). Once browned and cooked, transfer the steak to a plate and let it rest.
- Sauté vegetables: Reduce skillet heat to medium and add the remaining 1 tablespoon of olive oil. Add sliced onions and minced garlic, sauté for 1-2 minutes until onions start to soften and garlic is fragrant. Add red and green bell peppers and continue sautéing for 2-3 more minutes until vegetables are tender but still crisp. Remove from heat.
- Slice steak and combine: After resting, slice the steak thinly or chop into bite-sized pieces. Mix the sliced steak into the skillet with sautéed onions and peppers, combining all ingredients evenly before serving.
Notes
- Resting the steak after searing helps retain juices and improves tenderness.
- You can substitute sirloin with skirt or flank steak for a different texture.
- Adjust cayenne pepper according to your preferred spice level.
- Serve fajitas with warm tortillas, salsa, sour cream, and guacamole for a delicious meal.
- Use a cast iron skillet for best searing results.
