These Easy Black Bean Nacho Burgers are a flavorful and hearty vegetarian alternative to traditional burgers, featuring a crispy exterior with a savory black bean and tortilla chip filling. Perfect for a quick and satisfying meal, served with fresh avocado, salsa, and sour cream on toasted buns.

  • Total Time: 1 hour 25 minutes
  • Yield: 4 servings

Ingredients

Black Bean Patties

  • 2 cups cooked black beans (rinsed and drained)
  • 1 cup finely crushed nacho-flavored tortilla chips (such as Doritos)
  • ½ cup salsa
  • ½ cup shredded cheddar cheese
  • 1 large egg (lightly beaten)
  • 2 green onions (thinly sliced)
  • Salt and pepper (to taste)
  • 3 tablespoons olive oil

Serving

  • 4 hamburger buns (toasted, if desired)
  • Sliced avocado (optional)
  • Salsa (optional)
  • Sour cream (optional)

Instructions

  1. Mash the beans: In a large bowl, mash the black beans until mostly smooth, leaving some texture to maintain a good bite in the patties.
  2. Mix ingredients: Stir in the finely crushed tortilla chips, salsa, shredded cheddar cheese, beaten egg, sliced green onions, salt, and pepper. Allow the mixture to sit for 10 minutes to let the flavors meld and chips soften slightly.
  3. Form patties: Divide the mixture into 4 equal portions and shape each into a patty. Place the patties on a plate, cover them, and refrigerate for at least 30 minutes to help them set and hold their shape during cooking.
  4. Heat oil: Heat 2 tablespoons of olive oil in a large nonstick skillet over medium heat, preparing it for frying the patties.
  5. Cook patties: Add the patties to the skillet and cook for 4-5 minutes on one side until golden brown. Flip the patties, add the remaining tablespoon of olive oil around the edges of the skillet, and cook for another 4-5 minutes until the other side is also golden and the patties are heated through.
  6. Assemble and serve: Serve the cooked patties on toasted hamburger buns, topped with sliced avocado, salsa, and sour cream if desired, for a delicious and complete burger meal.

Notes

  • For a vegan version, substitute the egg with a flax egg or mashed flaxseed and use vegan cheese.
  • To make the patties gluten-free, ensure the nacho-flavored tortilla chips are certified gluten-free.
  • Refrigerating the patties before cooking helps them hold their shape better while frying.
  • These burgers freeze well—shape patties and freeze on a tray before transferring to a bag for up to 2 months.
  • You can customize the toppings by adding lettuce, tomatoes, or pickled jalapeños for extra kick.
