This Easy Chicken Paprikash recipe is a comforting Hungarian-inspired dish featuring tender chunks of chicken simmered in a rich, paprika-infused sauce. Served over buttery egg noodles and finished with a creamy sour cream sauce, it’s a hearty meal perfect for family dinners or special occasions. The combination of sweet Hungarian paprika and a velvety sauce creates a flavorful, satisfying plate that’s both rustic and elegant.

  • Total Time: 45 minutes
  • Yield: 6 servings

Ingredients

Chicken and Seasoning

  • 2.5 pounds boneless chicken breasts and thighs, diced in bite-size chunks
  • 2 teaspoons kosher salt, divided (plus extra for seasoning)
  • 3 tablespoons all-purpose flour, divided
  • 1/2 teaspoon ground black pepper

Sauté Base

  • 4 tablespoons salted butter, divided
  • 1 medium yellow onion, chopped
  • 3 tablespoons Hungarian sweet paprika
  • 1 1/2 cups chicken stock

Noodles

  • 1 (12-ounce) package egg noodles
  • 2 tablespoons salted butter

Finishing

  • 1 cup sour cream

Instructions

  1. Flour the chicken: Season the diced chicken with 1 teaspoon kosher salt and ground black pepper. Toss the chicken pieces with 2 tablespoons of all-purpose flour until evenly coated. Set the chicken aside to prepare the other ingredients.
  2. Sauté onions and brown chicken: In a large skillet, melt 2 tablespoons of salted butter over medium heat. Add the chopped yellow onion and sauté for about 10 minutes until softened and translucent. Add the flour-coated chicken pieces to the skillet and brown them on all sides, ensuring a nice sear for flavor.
  3. Deglaze the pan: Carefully pour in half of the chicken stock into the skillet, using a wooden spoon to scrape up any browned bits off the bottom of the pan. This adds rich flavor to the sauce base.
  4. Simmer chicken in paprika sauce: Add the remaining chicken stock, Hungarian sweet paprika, and 1 teaspoon kosher salt to the skillet. Stir well to combine, then reduce the heat to medium-low. Cover the skillet and let the chicken simmer gently for about 25 minutes, or until very tender.
  5. Cook the egg noodles: While the chicken is simmering, prepare the egg noodles according to the package instructions. Reserve 1/4 cup of the cooking liquid before draining the noodles. Return the drained noodles to the pot, add the reserved cooking liquid and 2 tablespoons of salted butter, and stir over low heat for 1 to 2 minutes until the noodles are well coated and buttery.
  6. Prepare the sour cream sauce: Once the chicken is tender, remove it from the skillet and place on a plate. Whisk the remaining 1 tablespoon of flour into the sour cream until smooth. To temper the sour cream mixture and prevent curdling, slowly whisk in 1/2 cup of the hot chicken liquid from the skillet. Then, stir this tempered sour cream mixture back into the remaining chicken liquid until fully incorporated.
  7. Thicken the sauce and combine: Return the cooked chicken pieces to the skillet and stir to coat them evenly in the creamy paprika sauce. Simmer uncovered on low heat for about 5 minutes until the sauce thickens slightly. Be careful not to let the sauce boil to avoid curdling.
  8. Season and serve: Remove the skillet from heat. Taste and adjust seasoning with additional salt and freshly ground black pepper as desired. Serve the chicken paprikash hot over the buttery egg noodles, with extra paprika and sour cream on the side for garnish if desired.

Notes

  • Use Hungarian sweet paprika for authentic flavor; smoked paprika will alter the taste.
  • Tempering the sour cream is key to a smooth sauce—add hot liquid slowly to the sour cream before mixing it into the pan.
  • Chicken thighs add more flavor and tenderness compared to breasts alone.
  • Butter in the noodles can be adjusted to taste or replaced with olive oil for a lighter option.
  • This dish pairs well with a crisp green salad or steamed vegetables for a balanced meal.
  • Do not boil the sauce after adding sour cream to prevent curdling.
