Ingredients
Chickpea Patties Ingredients
- 1 15 oz can chickpeas, drained and rinsed
- ½ cup breadcrumbs
- ½ white onion, diced
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 tablespoons olive oil
- 1 egg
Lemon Garlic Aioli Ingredients
- 1 cup Greek yogurt
- 2 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Make the Lemon Garlic Aioli: In a small bowl, combine the Greek yogurt, extra virgin olive oil, lemon juice, garlic powder, salt, and black pepper. Whisk together thoroughly until smooth. Refrigerate the aioli to allow the flavors to meld while you prepare the patties.
- Prepare the Chickpea Mixture: Using a potato masher or food processor, mash the drained and rinsed chickpeas until they are broken down but still have some texture. In a large bowl, mix together the mashed chickpeas, breadcrumbs, diced white onion, cumin, turmeric, garlic powder, onion powder, and the egg. Stir until fully combined and the mixture can be shaped.
- Form the Patties: Shape the chickpea mixture into patties roughly 2 to 3 inches wide, ensuring they hold together well for cooking.
- Cook the Patties: Heat a large skillet over medium heat and add the olive oil. Once hot, carefully place the chickpea patties in the skillet. Cook for about 5 minutes on each side or until each side is golden brown and slightly crispy.
- Serve: Remove the patties from the skillet and serve warm with a generous dollop of the chilled lemon garlic aioli on the side for dipping or spreading.
Notes
- For a vegan option, replace the egg with a flax egg and use a plant-based yogurt for the aioli.
- You can add chopped fresh herbs such as parsley or cilantro to the chickpea mixture for extra flavor.
- If the mixture feels too wet to form patties, add more breadcrumbs incrementally.
- Serve patties on a salad, in a sandwich, or with a side of roasted vegetables for a complete meal.
- Make the aioli a day ahead to enhance its flavor even more.
