Ingredients
Chocolate Mixture
- 4 oz bittersweet chocolate
- 4 oz butter
Batter
- 2 large eggs
- 1/2 cup sugar
- 2 tablespoons flour
- 1 teaspoon vanilla extract
- 1/2 teaspoon instant coffee or espresso powder (optional)
For Ramekins
- Butter (for greasing)
- Cocoa powder or sugar (for dusting)
Instructions
- Prepare Ramekins: Preheat your oven to 400°F (200°C). Generously butter four 4-ounce ramekins, then dust them with cocoa powder or sugar to prevent sticking. Set them aside while you prepare the batter.
- Melt Chocolate and Butter: In a medium microwave-safe bowl, combine the bittersweet chocolate and butter. Microwave in 30-second increments, stirring between intervals, until fully melted and smooth.
- Make Batter: In a separate large bowl, whisk together the eggs and sugar until the mixture becomes pale and fluffy. Gradually whisk in the melted chocolate and butter mixture. Add the flour, vanilla extract, and instant coffee or espresso powder (if using), then stir gently until well combined.
- Fill Ramekins: Evenly divide the batter among the prepared ramekins. Place the ramekins on a baking sheet for easy transfer in and out of the oven.
- Bake: Bake the cakes for 10 to 12 minutes, or until the edges begin to pull away from the ramekins but the centers remain jiggly when gently shaken. This ensures the molten lava center remains gooey.
- Serve: Carefully remove the ramekins from the oven and serve immediately. For an extra special touch, top with a scoop of ice cream or a dusting of powdered sugar.
Notes
- Be sure not to overbake, as this will cause the molten center to firm up.
- Use high-quality bittersweet chocolate for the best flavor and texture.
- Instant coffee or espresso powder enhances the chocolate flavor but is optional.
- You can prepare the batter ahead of time and refrigerate it, but bake just before serving.
- Serve with vanilla ice cream, whipped cream, or fresh berries for a delightful contrast.
