Ingredients
Chocolate Mousse
- 2 Tbsp (28g) salted butter, diced into 4 pieces
- 1 cup (6 oz) semi-sweet chocolate chips
- 1/2 cup (3 oz) bittersweet chocolate chips (or another 1/2 cup semi-sweet for a less rich flavor)
- 2 cups (104g) mini marshmallows
- 1/3 cup (80ml) milk (whole or 2%)
- 1 tsp vanilla extract
- 1 3/4 cups (415ml) heavy whipping cream
Crust
- 1 (6 oz) store-bought chocolate cookie crust (or Oreo pie crust)
Topping
- 1 cup (235ml) heavy cream
- 2 Tbsp (25g) granulated sugar
- Chocolate shavings for garnish
Instructions
- Combine Ingredients: Add butter, milk, semi-sweet chocolate chips, bittersweet chocolate chips, and marshmallows to a large saucepan.
- Melt Mixture: Heat over low heat, stirring constantly until the chocolate and marshmallows have melted completely. This may take some time, so keep stirring to prevent burning.
- Cool Mixture: Remove the saucepan from heat, stir in vanilla extract, then pour the mixture into a large mixing bowl. Let it cool to about room temperature, approximately 45 to 60 minutes.
- Whip Cream: In a chilled bowl, whip 1 3/4 cups of heavy whipping cream until very stiff peaks form. Gently fold the whipped cream into the cooled chocolate mixture to create the mousse.
- Fill Crust: Pour the chocolate mousse evenly into the store-bought chocolate cookie crust. You can reserve some mousse if you prefer a thinner filling.
- Chill Pie: Refrigerate the pie for 3 hours until it is set.
- Prepare Topping: Whip the remaining 1 cup of heavy cream with 2 tablespoons of granulated sugar in a cold mixing bowl using an electric hand mixer until stiff peaks form.
- Top and Garnish: Spread the whipped cream topping over the chilled mousse pie, then garnish with chocolate shavings for a decorative finish.
- Serve: Cut into slices and serve chilled. Store any leftovers in the refrigerator.
- Optional Variations: For a milk chocolate flavor, use 1 cup milk chocolate chips and 1/2 cup semi-sweet chocolate chips. To make chocolate shavings, run a vegetable peeler down the sides of a bar of chocolate.
Notes
- Use a chilled bowl to whip heavy cream for better volume and stiffness.
- Stir constantly while melting marshmallows and chocolate to avoid burning and ensure smooth texture.
- Allow the chocolate mixture to cool fully before folding in whipped cream to prevent melting the cream.
- The pie needs at least 3 hours chilling time for the mousse to set properly; overnight chilling is ideal.
- Chocolate shavings add an elegant touch and can be made easily with a vegetable peeler on a chocolate bar.
- You can reserve part of the mousse to serve later in individual cups if you prefer a thinner pie layer.
