This Easy Crockpot Meatloaf Dinner is a comforting, hands-off recipe perfect for busy days. Ground beef is seasoned and mixed with flavorful ingredients, topped with a tangy sauce, then slow-cooked alongside tender carrots and red potatoes for a complete meal with minimal effort and mess.

  • Total Time: 7 hours 10 minutes
  • Yield: 6 servings

Ingredients

Meatloaf

  • 2 lb extra lean ground beef
  • 1/4 cup bread crumbs
  • 2 eggs
  • 1/4 cup diced onion
  • 2 tsp garlic powder
  • 1 TB dried parsley
  • 1 tsp salt
  • 1/2 tsp pepper
  • 3 TB A1 sauce
  • 1/4 cup ketchup
  • 1/3 cup BBQ sauce

Topping

  • 1/3 cup ketchup
  • 2 TB brown sugar
  • 2 tsp Worcestershire sauce

Veggies

  • 2 cups baby carrots
  • 3-4 cups small red potatoes
  • 2 TB olive oil
  • 1 TB minced garlic
  • Salt and pepper to taste

Instructions

  1. Prepare the crockpot and meatloaf mixture: Spray your crockpot with cooking spray. In a large bowl, combine the ground beef, bread crumbs, eggs, diced onion, garlic powder, dried parsley, salt, pepper, A1 sauce, ketchup, and BBQ sauce. Mix thoroughly by hand until all ingredients are well integrated.
  2. Shape and place the meatloaf: Form the mixture into a loaf shape and place it in the center of the slow cooker, making sure it does not touch the edges to allow even cooking.
  3. Make the topping and apply: In a small bowl, mix together ketchup, brown sugar, and Worcestershire sauce until smooth. Brush this topping evenly over the meatloaf to coat the surface thoroughly.
  4. Prepare the vegetables: In a large bowl, combine baby carrots, small red potatoes, olive oil, minced garlic, salt, and pepper. Toss well to evenly coat the vegetables with seasoning and oil.
  5. Arrange vegetables and cook: Place the seasoned vegetables around the outer edges of the meatloaf inside the crockpot. Cover and cook on LOW for 7 to 8 hours until the meatloaf is fully cooked and vegetables are tender.

Notes

  • For best results, do not let the meatloaf touch the sides of the crockpot to ensure even cooking.
  • You can use fresh garlic instead of garlic powder if preferred, adjusting quantity as needed.
  • If desired, add additional herbs like thyme or rosemary to the vegetable mix for extra flavor.
  • Check vegetables near the end of cooking to ensure they are tender; you can remove the lid and add more time if needed.
  • Leftovers keep well refrigerated for up to 3 days and can be reheated in the microwave or oven.
