This easy egg salad recipe is a classic, creamy, and flavorful dish perfect for sandwiches or as a side. Made with simple ingredients like hard-boiled eggs, mayonnaise, mustard, and fresh herbs, it offers a delicious and quick way to enjoy a satisfying meal or snack. The salad is chilled for a few hours to develop flavors and served best on rolls, croissants, or bread.

  • Total Time: 4 hours 30 minutes
  • Yield: 8 servings

Ingredients

Eggs

  • 12 large eggs

Salad Mixture

  • 1/2 cup mayonnaise
  • 1 Tbsp yellow mustard or Dijon mustard
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp granulated garlic
  • 1/2 tsp dry dill weed (OR 1 teaspoon chopped fresh dill weed)
  • 1/2 cup finely diced celery
  • 1/2 cup finely chopped green onion
  • 1/4 cup chopped dill pickles OR sweet pickle relish

For Serving

  • Rolls, croissants or bread

Instructions

  1. Boil the Eggs: Place the eggs in a large saucepan in a single layer and cover with cold water. Bring to a rolling boil for 2 minutes, then cover with a lid and turn off the heat. Let the eggs stand in the hot water for 10-15 minutes to finish cooking.
  2. Prepare the Dressing: While the eggs are cooking, whisk together mayonnaise, mustard, salt, black pepper, granulated garlic, and dill in a medium mixing bowl until well combined.
  3. Cool and Peel Eggs: Drain the hot water from the eggs and run them under cold water to cool. Once cooled enough to handle, peel the shells off the eggs. Slice each egg in half lengthwise.
  4. Mash the Yolks: Using a spoon, carefully remove the egg yolks into a shallow bowl or plate. Mash the yolks thoroughly with a fork until crumbly and smooth.
  5. Chop the Whites and Combine: Finely chop the egg whites with a sharp knife and add them to the mashed yolks. Then fold in the celery, green onion, and chopped dill pickles or sweet pickle relish. Stir the mixture together until all ingredients are evenly incorporated.
  6. Season and Chill: Taste the egg salad and adjust the salt and pepper if needed. Cover the bowl with plastic wrap and chill in the refrigerator for at least 2 to 4 hours to allow the flavors to blend. Serve chilled on rolls, croissants, or your favorite bread.

Notes

  • For creamier egg salad, add extra mayonnaise as desired.
  • Use Dijon mustard for a sharper flavor or yellow mustard for a milder profile.
  • Chilling the salad enhances the flavors and texture.
  • Fresh dill weed can substitute dried dill for a more vibrant taste.
  • This salad keeps well refrigerated for up to 3 days.
