Ingredients
For the Sauce
- 3/4 cup Heavy Cream
- 3 tablespoons Unsalted Butter
- 1/2 cup Freshly Grated Parmesan Cheese
For the Pasta
- 6 ounces Fettuccine Noodles (Linguine noodles work too)
- Salt, to taste
- Freshly Ground Black Pepper, to taste
- 3/4 cup Frozen Peas
Instructions
- Boil Pasta Water: Bring a large pot of water to a rolling boil to prepare for cooking the fettuccine noodles.
- Prepare Cream and Butter: In a 2-cup glass measuring cup, combine the heavy cream and unsalted butter. Microwave in 30-second intervals, pulsing each time, until the butter is completely melted and the mixture is steaming. Set aside.
- Grate Cheese: Freshly grate the Parmesan cheese if not pre-grated to ensure the best melting and flavor.
- Cook Pasta: Add a few large pinches of salt to the boiling water, then add the fettuccine noodles. Stir once to prevent sticking and cook according to the package directions, typically about 8-10 minutes for al dente.
- Add Peas: About 1 minute before the pasta finishes cooking, stir in the frozen peas to warm them through.
- Reheat Sauce: Briefly microwave the cream and butter mixture until it is steaming again to ensure it is warm for combining.
- Drain Pasta and Peas: Drain the noodles and peas and transfer them to a large serving bowl immediately to retain heat.
- Add Cheese: Sprinkle the freshly grated Parmesan cheese over the hot pasta and peas, then toss thoroughly to melt the cheese evenly throughout.
- Incorporate Cream Mixture: Pour the warm cream and butter sauce over the pasta, stirring gently to combine evenly. Taste and adjust with additional salt and freshly ground black pepper as needed.
- Serve: Serve the creamy fettuccine Alfredo immediately for best flavor and texture.
Notes
- Use freshly grated Parmesan cheese rather than pre-grated for better melting and flavor.
- You can substitute linguine noodles if fettuccine is unavailable.
- Adjust salt carefully since Parmesan and salted butter add saltiness.
- For extra protein, add grilled chicken or shrimp.
- To keep peas vibrant, add them just before pasta finishes cooking.
- Microwaving sauce in short bursts prevents curdling and ensures smooth texture.
