This Easy Ground Beef Enchiladas recipe delivers a quick and delicious Mexican-inspired dinner packed with rich flavors from seasoned ground beef, enchilada sauce, and melted cheeses. Perfect for busy weeknights, it combines simple ingredients into a comforting baked dish that everyone will love.

  • Total Time: 25 minutes
  • Yield: 6 servings

Ingredients

Meat Mixture

  • 1 lb ground beef
  • ½ onion, chopped
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ cup salsa
  • 1 tablespoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin

Enchiladas

  • 12-18 corn tortillas
  • 2 cans red enchilada sauce (10 oz each)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) to prepare for baking the enchiladas.
  2. Cook the ground beef and onions: In a large skillet, brown the ground beef along with the chopped onion over medium heat. Season with salt, pepper, chili powder, paprika, and cumin while cooking. Stir in the salsa to combine flavors.
  3. Simmer flavors: Reduce heat to low and let the meat mixture cook for about 10 minutes to allow the spices and salsa to meld together.
  4. Prepare baking pan: Pour a small amount of the red enchilada sauce into the bottom of a 9×13-inch baking dish to prevent sticking and add extra flavor.
  5. Dip and fill tortillas: Heat the remaining enchilada sauce in a saucepan. Quickly dip each corn tortilla into the warm sauce, then spoon a portion of the meat mixture onto the tortilla. Roll it up and place it seam side down in the baking pan. Repeat until all the meat mixture is used.
  6. Add sauce and cheese: Pour the remaining enchilada sauce over the rolled tortillas in the baking dish. Sprinkle the shredded cheddar and Monterey Jack cheese evenly on top.
  7. Bake the enchiladas: Place the pan in the preheated oven and bake for 10 minutes, or until the cheese is melted and the enchiladas are heated through.
  8. Serve: Remove from the oven and top with your favorite garnishes—such as sour cream, guacamole, chopped cilantro, or sliced jalapeños—and enjoy your hearty ground beef enchiladas!

Notes

  • You can use flour tortillas if preferred, though corn tortillas are traditional for enchiladas.
  • Adjust the amount of chili powder and cumin to suit your spice preference.
  • Leftover enchiladas can be stored in the refrigerator for up to 3 days and reheated in the oven.
  • For extra flavor, add black beans or corn to the meat mixture.
  • Make sure to warm the tortillas before dipping to prevent cracking when rolling.
