These Easy Homemade Yeast Rolls are soft, fluffy, and lightly sweetened bread rolls perfect for any meal. Made from scratch with simple pantry staples and kneaded in a stand mixer, they rise twice to achieve their tender texture. Topped with melted butter for a golden finish, these rolls are ideal for family dinners, holidays, or as a delicious side.

  • Total Time: 2 hours 7 minutes
  • Yield: 24 rolls

Ingredients

Dough Ingredients

  • 2 cups warm water
  • 2 tablespoons instant yeast
  • ½ cup granulated sugar
  • ½ cup canola oil
  • 4 cups bread flour
  • 2½ to 3½ cups all-purpose flour
  • ¾ cup nonfat dry milk powder
  • 1 tablespoon salt

Topping

  • 3 tablespoons melted butter

Instructions

  1. Mix the wet ingredients and yeast: In the bowl of a stand mixer, use a fork to combine the warm water, instant yeast, granulated sugar, and canola oil until the yeast starts to activate.
  2. Add dry ingredients and knead: Add the bread flour, 2½ cups of all-purpose flour, nonfat dry milk powder, and salt to the wet mixture. Attach the dough hook to the mixer and knead on low speed for 2-3 minutes until the dough begins to come together around the hook. Then increase the speed slightly and knead for about 5 more minutes until the dough is smooth, soft, and still slightly tacky. Gradually add additional all-purpose flour if needed, a little at a time.
  3. First rise: Remove the dough from the hook briefly and spray the mixer bowl with cooking spray. Place the dough back into the bowl and cover with plastic wrap. Set the bowl in a warm location and allow the dough to double in size, about 1 hour.
  4. Prepare baking dish and divide dough: Spray a 9×13 inch baking dish with cooking spray. Punch down the risen dough gently and divide it into 24 equal-sized pieces. Roll each piece into a smooth ball and arrange them in the baking dish 4 wide and 6 deep, spaced evenly.
  5. Second rise: Cover the dough balls with greased plastic wrap. Let them rise in a warm place until poofy and nearly doubled in size, about 30 minutes. Meanwhile, preheat the oven to 400°F (204°C).
  6. Bake the rolls: Remove the plastic wrap and bake the rolls in the preheated oven for 17-20 minutes or until the tops are golden brown and cooked through.
  7. Finish with butter: As soon as the rolls come out of the oven, brush them lightly with melted butter to add moisture and flavor. Serve warm and enjoy pulling apart the soft rolls.

Notes

  • The amount of all-purpose flour can vary slightly depending on humidity and flour brand—add gradually for best dough texture.
  • Use warm water (about 110°F/43°C) to activate the yeast without killing it.
  • If you don’t have a stand mixer, you can knead the dough by hand for 10-12 minutes until smooth and elastic.
  • These rolls freeze well after baking; thaw and warm before serving.
  • Brush with additional melted butter or honey butter for extra flavor.
