Ingredients
Eggs and Cooking
- 12 large eggs (hard boiled and egg yolks grated)
- 1 cup water
Deviled Egg Filling
- ½ cup mayonnaise
- 1 tablespoon Dijon mustard
- ¼ teaspoon kosher salt (or more to taste)
- ¼ teaspoon smoked paprika (plus more for serving)
Garnish
- 2 tablespoons chives (finely chopped for serving)
- 1 teaspoon everything but the bagel seasoning (for serving)
Instructions
- Prepare the Instant Pot: Place the rack in the bottom of the Instant Pot and pour in 1 cup of water. Carefully arrange the whole eggs on the rack to ensure they are not sitting directly in the water.
- Cook the eggs: Secure the lid and set the Instant Pot to high pressure/manual mode for 5 minutes. This pressure cooking method guarantees perfectly hard-boiled eggs with minimal fuss.
- Quick release and cool: When the cooking time is complete, perform a quick pressure release to release steam. Immediately transfer the eggs into a bowl of iced water and let them cool for 5 minutes. This cooling step stops the cooking process and makes peeling easier.
- Peel and halve eggs: Gently peel the cooled eggs and slice each one in half lengthwise to expose the yolks.
- Prepare the filling: Remove the yolks from the egg whites and grate them finely into a medium-sized bowl. Add mayonnaise, Dijon mustard, kosher salt, and smoked paprika. Mix thoroughly until the filling is smooth and well combined.
- Fill the eggs: Transfer the yolk mixture into a piping bag or a Ziplock bag with the tip cut off. Pipe the filling neatly into each egg white half, filling evenly and generously.
- Garnish and serve: Sprinkle the deviled eggs with additional smoked paprika, finely chopped chives, and everything but the bagel seasoning if using. Arrange on a serving platter and serve chilled or at room temperature.
Notes
- Using the Instant Pot makes boiling eggs hands-free and foolproof.
- Quick cooling in ice water helps prevent the green ring around yolks and makes peeling easier.
- You can adjust seasoning to taste, adding more salt or mustard if preferred.
- Piping the yolk mixture creates a pretty, professional presentation but you can spoon it in if preferred.
- These deviled eggs can be stored covered in the refrigerator for up to 2 days.
