Ingredients
Cauliflower Hummus
- 3 Cups Cooked cauliflower florets
- 1/2 Cup Tahini
- 1/2 Cup Lemon juice
- 3 Tablespoons Olive oil
- 1/2 teaspoon Ground cumin
- 1/2 teaspoon Garlic powder (or roasted garlic)
- 2-3 Tablespoons Water
- Kosher salt to taste
Instructions
- Cook the Cauliflower: Prepare the cauliflower by steaming, boiling, or roasting until tender. This ensures a smooth texture when blended.
- Combine Ingredients: Add the cooked cauliflower, tahini, lemon juice, olive oil, ground cumin, and garlic powder to a high-speed blender or food processor.
- Blend to Smooth: Process all ingredients until the mixture is creamy and smooth. Add water gradually, 1 tablespoon at a time, to reach desired consistency.
- Season to Taste: Add kosher salt to taste and blend briefly to incorporate.
- Serve: Transfer the hummus to a serving dish, top with your favorite toppings such as olive tapenade, and serve with vegetable sticks for dipping.
Notes
- Cook the cauliflower by steaming, boiling, or roasting based on your preference. Steaming will keep it soft and moist, roasting adds a slightly nutty flavor.
- Using roasted garlic instead of garlic powder will add a deeper, caramelized garlic flavor.
- Adjust the water quantity to achieve your preferred hummus consistency.
- This hummus can be refrigerated in an airtight container for up to 4 days.
