Ingredients
For the Salsa
- 2 tablespoons red onion, diced
- 1 lime, juice and zest
- 1 tablespoon extra virgin olive oil
- 1 mango, diced
- 1 avocado, diced
- 6 cherry tomatoes, quartered
- 1 jalapeño, seeds removed and diced
- 1/4 cup fresh cilantro, roughly chopped
Instructions
- Prepare the base: Add the diced red onion, lime juice and zest, and olive oil to a mixing bowl. Let it sit for about 5 minutes to allow the flavors to meld and the onion to soften slightly.
- Combine all ingredients: Gently fold in the diced mango, avocado, quartered cherry tomatoes, diced jalapeño, and chopped cilantro into the bowl with the red onion mixture. Mix carefully to preserve the avocado’s texture while evenly distributing all ingredients.
Notes
- For extra heat, leave some jalapeño seeds in or add more jalapeño.
- Serve immediately for the freshest flavor and best texture; avocado can brown if left too long.
- This salsa pairs beautifully with grilled chicken, fish tacos, or tortilla chips.
- You can substitute fresh lime with lemon if preferred.
- To make it spicier, add a pinch of cayenne pepper or hot sauce.
